00:00i throw a monthly dinner party and this month is opreski themed and i know we want spring but what
00:05about this sherpa crackling firewood cozy energy so why not throw a fondue party started off the
00:10evening with the dirty martini a quintessential opreski drink but i also wanted to incentivize
00:14my cheese greeting helpers while i got started on the crispy chicken for the salad the chicken
00:18with an egg wash heavy cream and breadcrumbs they were super crispy and delightful with a
00:23lovely dijon glaze sauce that paired perfectly with this honey dijon balsamic vinaigrette when
00:27i got the chance i set the table making sure to stick with that cool toned color scheme that
00:31screams large you know your silvers your greens your blues then i got cooking the star of the show
00:35this vintage better homes and gardens 1972 fondue that's right you start with the sweet cooking
00:41wine and then you mix in some lovely cornstarch with the swiss and grayer cheeses and then you
00:45can't abandon it once that cheese starts sizzling you have to consistently stir and all the veggies
00:50are going this cute bhg platter once the cheese got to a good spot i had to take a test bite of course
00:55and needless to say my face says it all i was impressed while that stayed warm i chopped up
00:59the cabbage and brussels and apples for a lovely winter green salad took that baguette out of the
01:03oven to slice up for the fondue and started setting the table don't get me wrong i'm craving spring just
01:08as much as the next girl but there's something so special about sitting down with warm cheese red wine
01:13and family to reflect and be grateful for another winter season
