My name is Laina Hori and I'm one of the chefs and owners of Kisser restaurant here in Nashville,

Tennessee. Starting off, we're going to start with the mascarpone or mascarpone. We're also

going to add the vanilla extract and the granulated sugar for this first step. You're going to want

the whisk attachment for the KitchenAid or stand mixer. You're going to want it to get sort of the

softened consistency. This makes it easier to add the cream in this next step. Give it a whip until

basically almost like you're making a whipped cream. I always like to use a piping bag when

making fruit sandwiches. It just gives you more control over the product. You'll want to snip the

end to where you have about half inch diameter opening. For this recipe, I recommend slicing your

bread if you can get it in a whole slice like this to about three quarters of an inch thick. For

assembling the sandwich, you're going to take your two sides of bread along with five strawberries that

have been poured. First is our cream. You want to set down a nice even pretty thick layer on the base

of the bread. For the strawberries, you're going to want to arrange them in a pretty specific way.

Take your largest strawberry that you have and place that in the center of the strawberry upright.

And we'll take the other strawberries with the fat end facing the center and just press them gently

into the cream. Place the top of the bread on and just give it a gentle push down. One thing that you

can do is you can wrap it in plastic wrap and set it in the refrigerator. That actually helps the cream

sort of firm up a little bit and makes it easier to slice. Okay, so this sandwich has been resting for

about two hours in the refrigerator. Now the fun part, we're going to cut the crust off of the bread

first. The tip I would give is make sure you have a sharp knife, but also that between cuts that you

give a little wipe down. It makes it just easier to get a clean cut. Try not to saw it because that

moves the cream around a little too much. Just try to do it in one motion if you can. And that's going to
