Focaccia has quickly become one of Australia’s favourite breakfast foods. The savoury Italian dish has become a staple of Ain’t Nonna’s in Wollongong, who say they make one of “the best” focaccia around.

00:12Nonna's Cafe said they've cracked the secret to baking the best focaccia in

00:16Australia. So we make the base dough. It's pretty basic, just flour, water, yeast,

00:21olive oil. Bring it together and then kind of just rest and it's a mixture of

00:26resting and folding throughout the 48-hour time period. So it has time to

00:32develop sharp flavor and obviously that airiness that we will love. The

00:37restaurant takes a laid-back approach to topping their focaccias, deciding what to

00:40do on the day. I don't know whether it's seasonal. Oh yeah, it's the biggest thing about Aint Nonna's,

00:44like what's seasonal and then we just utilize what's available with markets,

00:48what's cheap, affordable and then we just go from there.
