00:52There is a booming business in architecture in reusing existing buildings and this is
01:10really important because if you demolish a building and you build a new one it takes
01:15a huge amount of carbon which is really bad for the environment. So we wanted to creatively
01:20inspire people and show them how we can reuse existing buildings and also sometimes much
01:26loved buildings which are kind of iconic on the landscape.
01:39The main building is a circular building so trying to recreate that out of gingerbread
01:42was quite challenging but a fun fact behind the scenes was that we actually used an old
01:46leftover piece of metal ductwork from a building site to bake our gingerbread around it to
01:51get that kind of circular shape.
02:18So we've got very structurally sound icing holding the whole thing together and it's
02:22pretty robust and the gingerbread itself is very structurally sound as well. It doesn't
02:27taste very nice but it stays up for a whole month.
02:31So that's the tower and the trunk. This is the row which is the one that I described
02:37of done by my team mate Alex. We know there is going to be a light there so we are also
02:44recycling the old model that we made for Gingerbread City last year. We break it into
02:50different pieces and make it into part of the model for this year.
03:04The super strong gingerbread so it's not very tasty but I did try eating it. It's very difficult
03:10to bite it.
03:17The gingerbread itself can't be reused but we are going to throw it into organic waste
03:23so it will go back into the system and then the exhibition plinths and the boxes they
03:31can all be reused in the future. So the reuse element is the display equipment.
