00:11The weather is cooling down.
00:12We're getting into holiday cooking time.
00:15And that's why I partnered up with Quaker Oats to really show cooks out there the great
00:20uses and flexibility of using Quaker Oats.
00:23So here on my right, this is a spicy beef chili, but using steel cut oats.
00:29Now, if you've ever used steel cut oats in a savory application, they eat really lovely.
00:34They've got a really nice mouthfeel.
00:35They're going to bulk up the dish.

00:38And we're talking about all the health benefits.
00:39And you don't even need to hit that too hard, you know, full of fiber.

00:47Other dishes for the holidays are going to be meatballs, meatloaves.

00:53So now, and on the sweet side, I've made a brown butter scone here.

01:00But once you make that scone, I want you to sub out some of your flour and add some old-fashioned oats.
01:06That's going to give you a really lovely texture to this.
01:09It's going to be kind of snappy, kind of crumbly.
01:12And your kids won't even know that they're actually eating healthier.

01:16I remember being a kid and having, always having a container of old-fashioned and also

01:25We were using them for mainly breakfast, but it's, you know, as a chef, it's time to go
01:29beyond breakfast.
01:30And it's time to really understand and embrace the versatility.
01:33So on the sweet side, this is the season for cakes, pies, and cookies.
01:38Those are all perfect opportunity for oats.
01:41And on the savory side, the appetizer meatballs, the stews, the dressings, the stuffings, that's
01:47a really nice place for some steel cut oats as well.
