00:00I've got boiling chicken stock. I've seasoned it for salt. Extra virgin olive oil. As it comes to
00:05the boil, gently sprinkle in your polenta and whisk at the same time. If you throw it in too quickly,
00:12it'll go lumpy. And now that it's boiling, it starts to thicken up nicely. I like it quite
00:17thick. Once you've got the thickness, take it off the stove. A touch more salt. Beautiful aged
00:22parmesan, fresh pepper, butter and parsley. Give that a really nice mix. Beautiful. So you almost
00:30want it like just dropping through that whisk. And now the beautiful Italian kiss. Extra virgin
00:37olive oil. Give it its final coat of jewels where it becomes shiny, rich. That is beautiful.
