00:09No matter what kind of pit you're cooking on,

00:11you're gonna want a few tools.

00:12My must-haves are an adjustable grill grate,

00:15a cast iron skillet, and heat gloves.

00:18With a fire pit, you can cook with charcoal briquettes,

00:20lump charcoal, or even wood logs.

00:23Just make sure if you're using wood

00:24that it's hardwood and food safe.

00:26You can cook virtually anything over an open fire.

00:29It all comes down to managing the heat.

00:30Before adding your food, wait for the coals to ash over.

00:33Then carefully place your hand above the grill grate

00:36to get a good gauge on the heat intensity.

00:38If you can only hold it there for two to four seconds,

00:40the grill is at high heat.

00:41Five to seven seconds is medium,

00:43and eight to 10 seconds is low.

00:45Add your food and cook it like you would on any other grill.

00:48If things seem to be cooking too fast,

00:49just raise that grill grate to reduce the heat.
