25 Years of wine making for DeSalis Wines

00:23 It's pretty bloody good.

00:25 Blanc de Blanc, Chardonnay from our second vineyard.

00:30 So, last pick of bubbles.

00:32 Surprisingly late-ripening Blanc, but really happy.

00:48 So, it's Pinot Mariefeld.

00:50 It's a bit of a funny Pinot sub-variety.

00:54 And once this reaches the end of its ferment,

00:58 we'll put it straight into bottle,

01:00 and it'll stay in bottle for around 18 months,

01:02 and then take the yeast out, disgorge it,

01:05 and away it goes.

01:07 So, it's pretty quick, easy, short style bubbles.

01:17 Ah, yeah, here we are on Lofty Vineyard, the home of Desalas.

01:21 It's 25 years, seems like yesterday, down at Cannobla Smith,

01:25 picking some fruit, making wine in Manly Vale in the backyard.

01:30 Been on Lofty Vineyard for 15 years now.

01:34 I'm retiring into Foundation Winemaker.

01:37 Sons are taking over the business.

01:42 It's just been a joy at Nashville on the mountain,

01:46 in the snow, in winter, and four seasons.

01:50 Couldn't be happier.

01:53 It's just a beautiful life, making wine,

01:56 and a really great community.

01:58 So, it's another 25 years ahead of me, and off we go.
