Uzbek Samsa is a delicious pastry filled with spiced lamb and onions, traditionally baked in a clay oven. It's a popular snack and street food in Uzbekistan and other Central Asian countries. Here's a recipe for making crispy tortillas of Oriental cuisine with lamb Samsa in the oven:

Ingredients:

For the dough:

500g all-purpose flour
250ml warm water
2 tablespoons vegetable oil
1 teaspoon salt
For the filling:

500g ground lamb (you can also use beef or a combination of both)
1 large onion, finely chopped
2-3 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground black pepper
1/2 teaspoon paprika or chili powder (adjust to your spice preference)
Salt to taste
For brushing:

1 egg, beaten
Instructions:

Prepare the dough:

In a large mixing bowl, combine the flour and salt.
Gradually add warm water and vegetable oil to the flour mixture.
Mix everything together until a smooth and elastic dough forms.
Cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes.
Prepare the filling:

In a separate bowl, mix the ground lamb, finely chopped onions, minced garlic, ground cumin, ground coriander, black pepper, paprika or chili powder, and salt.
Mix everything well until all the spices are evenly distributed throughout the meat.
Preheat the oven:

Preheat your oven to 180°C (356°F).
Shape the Samsa:

Divide the rested dough into small equal-sized balls, about the size of a walnut.
On a floured surface, roll out each dough ball into a thin, round disc, around 15-20cm in diameter.
Fill and fold the Samsa:

Place a generous tablespoon of the spiced lamb filling onto one half of the rolled-out dough disc.
Fold the other half over the filling to create a half-moon shape.
Pinch and twist the edges of the dough to seal the Samsa, ensuring no filling spills out during baking.
Brush and bake:

Place the prepared Samsa on a baking sheet lined with parchment paper.
Brush the top of each Samsa with beaten egg for a golden and glossy finish.
Bake the Samsa in the preheated oven for about 25-30 minutes or until they turn golden brown and crispy.
Serve:

Once the Samsa is baked, remove them from the oven and let them cool slightly.
Serve the Samsa warm as a delightful snack or appetizer. In Uzbekistan, they are often enjoyed with a cup of green tea.
