I used to make pot au feu over 10 years ago when I was a meat eater. Now that I am vegan, I want to recreate all the meals I used to enjoy.

* When you make the seitan, use whole wheat bread flour to get a brown color, rather than bleached bread flour. *

1. Season and truss the seitan.
