Introduction to Nipa Palm (Vietnamese: Coconut water) tree and fruits
Nipa exploitation is a long-standing tradition in Southeast Asia when a sizable part of residents in the Western Pacific coastal areas use Nypa as their main source of income.

In Vietnam, farmers today only use nipa for food and leaves for roofing or firewood , few people know the technique of extracting Nypa resin from flower stalks to cook sugar, brew wine, make beer , Vinegar fermentation , alcohol distillation and several other valuable products meanwhile are among the least effective sources of revenue for Nypa palm. The average yield of nipa sugar is 20.3 tons / ha, higher than that of cane sugar (about 5 to 15 tons / ha).

It takes until the 4th or 5th year for the tree to bear fruit. This time will last until the 55th year or more, meaning that each nipa can be harvested continuously for more than 50 years. Twice a day, people use a clean knife to cut a 2 mm thin slice on the top of the stem so that the sap flows out continuously.
