Who doesn’t love burgers? In Hebei, northern China, burgers are king, but here, the filling of choice is donkey meat. In fact, people in Hebei love it so much that there’s a popular saying: “In heaven, there is dragon meat. On earth, there is donkey meat.”
We went to Baoding, the city that claims to be the birthplace of donkey burgers, and met Li Li, the owner of a famous donkey meat shop, to find out how donkey meat became so big here, and—most importantly—what it tastes like.
