Chicken Congee | Healthy & Nutritious Chicken Rice Porridge In Pressure Cooker | Chao Ga - Tarika

One of the best food when sick, Chicken Congee is a nutritious and protein-rich recipe made with Rice, Chicken and garlic-chili oil. Names for congee are as varied as the style of its preparation. Despite its many variations, it is usually a thick porridge of rice largely disintegrated after prolonged cooking in water.

Ingredients for Garlic-Chilli Oil:
(Serves 2)
- 1/4 cup Oil
- 5 Cloves Garlic
- 2 tsp Chilli Flakes

Ingredients for Congee:
- Shiitake Mushrooms(soaked)
- 1/2 cup Basmati Rice(soaked)
- Button Mushrooms
- 1 1/2 piece Ginger(chopped)
- Spring Onions(green)
- 300 gms Chicken(breast & leg piece)
- 2 cups Water
- 1 1/2 cups Mushroom Water
- Salt
- White Pepper Powder or Regular Powder
- 1/4 tsp Toasted Sesame Oil
- Spring Onions(green)
- Fried Onions

Method:
1. In a saucepan heat oil and in a small jar add finely chopped garlic, chilli flakes
2. Once the oil is hot, pour it in the jar of garlic and chilli flakes and keep it aside
3. Take basmati rice and put it in the pressure cooker
4. Now, add shiitake mushrooms, button mushrooms, chopped ginger, spring onions, chicken(seasoned with salt & pepper), water and mushroom water to the pan
5. Add little salt and white pepper powder to the pan
6. Mix all, making sure chicken gets flavored and it is submerged completely in water
7. Now close the lid and let it cook on a high flame for 5 whistles
8. Open the lid, pull out the chicken and keep it aside
9. Stir the congee in the cooker, so it gets a good thick texture
10. Now, with clean hands start shredding the chicken
11. Add some of the shredded chicken in the cooker and stir it up
12. Take toasted sesame oil and add to the congee
13. Take out the congee in a serving bowl and garnish it with spring onions, fried onions, garlic-chilli oil, and some shredded chicken
