二更 | 六十年,他在衡山路做蛋糕

衡山路上,梧桐掩映。衡山宾馆显赫矗立,低调的栗子粉蛋糕,就放在门口西饼店的冰柜里,一排一排,包装并不起眼,塑料圆盒,盖上印着“毕卡第”建筑的商标。上海老先生老太太三两进入店内,拎了满满一塑料袋出来。
这是他们从小吃惯的味道,横跨两个世纪的美味。
90年前,霞飞路(今淮海中路)上有家DDS咖啡馆,老上海人称“迪迪斯”,当时话剧、电影界的文艺工作者时常光顾,小说《繁花》作者金宇澄的父亲也是常客。
DDS的西点师潘博亮,发明了这款栗子粉蛋糕。蛋糕长得不起眼,拇指大栗子磨成粉,拌入蛋糕,加上些许威士忌,挤上动物奶油,糯滑不腻,口感若云。无添加,24小时内必须吃完,冰镇后尤其美味。后来到了衡山宾馆,授艺徒弟应关葆。大型宴会和冷餐会必须要有甜点,面包、蛋糕、巧克力,应关葆向潘师傅学习了很多西点制作技艺。栗子蛋糕是坚持做到现在的,跑遍全国,挑选栗子品种,并在原有味道的基础上做了改良。
上世纪50年代,苏联专家来上海指导建设工作,下榻衡山宾馆,用栗子粉蛋糕招待,外宾相当欢喜。家住附近的电影演员秦怡、赵丹、王丹凤,越剧表演艺术家王文娟、袁雪芬等人的记忆里,都留存着栗子粉蛋糕的芬芳。
上世纪80年代中,淮海路第一食品商店边上举行食品交易会,衡山宾馆设了摊位,供应栗子粉蛋糕,当时上海人均工资不到100块,5块钱一只的栗子粉蛋糕不便宜,但来一批抢光一批,供不应求。
调面就像调水泥,抹蛋糕就像砌墙,裱花是作画,西点于他,是一门有扎实基本功的艺术。师傅年纪大了,应关葆来做,每天一百斤面粉,加上糖、油、水,调成面团,揉均匀发酵,对于锻炼身体是很好的机会。衡山宾馆60年间,应关葆从毛头小伙到白发苍苍,年过古稀,臂力仍过人,70多岁的老人,还参加老年足球队,跑一跑,出出汗,一个礼拜坚持两次,也给自己一个和大伙接触的机会。退休返聘后,每天仍一早来衡山宾馆指导蛋糕制作。
从小到现在,应关葆工作几乎没有离开过这里,也很少人在一个单位工作了超过60年,退休了还在坚持做一件事。
