RECIPE, for those of you who didn’t take notes during this video. LAME.

Ingredients
4 garlic cloves
2/3 lbs. sweet Italian sausage, removed from its casing (300g)
5 cups chopped broccoli (450g)
3 Tablespoons olive oil (45 mL)
1 teaspoon dried chili flakes (5g)
1 teaspoon dried oregano (5g)
1 egg
1 pound ball of pizza dough (450g)
All-purpose flour (for dusting)

1. Remove pizza dough from refrigerator and let rest at room temperature for at least 30 minutes.
2. Preheat oven to 400°. If you have a pizza stone, put it in the oven on the middle rack while it is preheating.
3. Set a large sautée pan or heavy bottomed pot over medium heat and add
2 tablespoons (30 mL) of olive oil. Add chopped garlic and sautée for 1 minute.
4. Add sausage meat and sautée, breaking it apart with a spoon in the pan while it cooks. Continue cooking and breaking it apart until the sausage begins to brown and is crumbled into small pieces -- about 10-15 minutes.
5. Remove sausage from the pan and set aside in a bowl, keeping as much as of the fat and oil in the pan as possible.
6. Add chili flakes and oregano, and stir, then add broccoli, seasoning it with salt and pepper.
7. Once the broccoli has absorbed all of the moisture, add about 3/4 cups of water and then use your spoon to scrape up all the brown bits at the bottom of the pan. Then allow broccoli to simmer until all of the water has evaporated.
8. Once the water is evaporated, add the remaining teaspoon of olive oil as well as the cooked sausage meat and stir well to combine. Now the mixture should taste tender and well-seasoned. Adjust seasoning as desired.
9. On a floured surface (like a cutting board), cut the dough ball in half. Take each dough piece, one at a time, and roll into a long, ovular shape using a floured rolling pin (or if you don't have one, a wine bottle). When the dough is stretched and thin, lay half of the broccoli-sausage mixture, spread evenly on to each piece of dough.
10. Roll up each dough, pressing down slightly as you roll it. Once they are rolled, gently cut three small slits across the top of each dough.
11. Crack the egg into bowl and add a splash of water. Whisk the egg for just a few seconds, and then brush the egg wash over each dough. (You can also spoon it over and then use your hands to coat each dough).
12. Place the doughs on either your hot pizza stone, or onto a baking sheet, and bake in the oven until the dough is golden brown (about 25-30 minutes).
13. When it is done, leave it to cool on your cutting board, then cut into slices, rustically.
