French Onion Mac 'n Cheese!!

It's hard to pick a favorite vehicle for starch and cheese... Should it be the cheesy crouton in your French Onion Soup, or the cheesy macaroni that transports you back to childhood with a single bite? Why settle? Why choose between oniony goodness and taste bud time travel??? Watch Cheffy's mashup of French Onion Mac & Cheese, and you'll never have to compromise again! About anything!

You'll need:
4 Medium Onions
3 sprigs Thyme
2 Bay Leaves
6 Tbsp butter (divided, 4 and 2)
1/2 tsp Salt (or to taste)
1/4 tsp Pepper (or to taste. Don't let us run your life!)
1 Cup Dry White Wine
4 cups low-sodium Beef Broth
1 cup Elbow Macaroni
2 Tbsp flour
3/4 cup milk
2 cups shredded cheese - your choice!
1 cup shredded mozzerella
Panko Bread Crumbs


Slice the onions - top to bottom. WITH the grain.
Melt 4 tablespoons of butter in a large pot over medium-low heat. Don't be ashamed of the amount of butter. This is FRENCH CUISINE. Add half the onions, then the salt and pepper. Cook the onions until slightly softened and stir until coated with butter.
Add the rest of the onions, and season with more salt and pepper.
Add thyme and bay leaves.
Then cook nice and slow for about 45 minutes, stirring occasionally. Until the onions are the most fragrant shade of brown you've ever seen. (Reflecting on life in this time optional. But really, what better use could you make of it?)
Once the onions are a delicious brown soft goop, add the white wine. Simmer for 6 minutes, then add the beef broth, and 1 cup water. Bring to a vigorous simmer and keep it that way for about 40 minutes.

MAC & CHEESE TIME!
Bring 4 cups of water to a simmer. Salt it well! Add 1 cup elbow macaroni. Cook until noodles are soft, then drain, reserving 1 cup of the starchy, starchy water.
Melt 2 tablespoons butter, then whisk in the flour. Add the milk and reserved pasta water. Bring to a simmer, stirring so things don't get lumpy.
Stir in the cheese until melted, then add some pepper. Stir in the cooked elbow macaroni.

TIME TO COMBINE!
Ladle some onion soup into oven-safe bowls or ramekins, then plop in some mac & cheese. Top with a layer of mozzarella cheese and a couple of tablespoons of Panko breadcrumbs.
Bake under the broiler on high for about 2-3 minutes, until the cheese is melted and bubbly and delicious.
Serve hot, but not so hot that you burn your mouth.
