Chilled Potato And Basil Soup - Simple, Healthy And Nutritious Soup Recipe By Annuradha Toshniwal

Annuradha Toshniwal is up with a simple soup recipe called, chilled potato and basil soup. This soup is absolutely delicious and is undoubtedly loaded with nutritious ingredients and aromatic flavors of basil.

Ingredients:

1 tbsp. butter
2 cloves chopped garlic
2 medium potatoes - peeled & cut Into pieces
1/4 cup fresh basil
2 cups water
2 tbsp. cashew nuts - ground
1tsp. lime juice
salt & pepper to taste

Method:

- In a pressure cooker, heat the butter and add the chopped cloves of garlic and stir well.
- Add the potatoes and few basil leaves and stir well.
- Add the water and close the lid of the pressure cooker.
- Wait for 2-3 whistles so that the potatoes are well cooked.
- Open the lid and then using a hand blender, blend all the ingredients well.
- Add the powdered cashew nuts, salt, pepper and lemon juice and mix it well.
- Tear in few basil leaves on the top.
- Pour the soup in a bowl and keep it in the refrigerator to cool down.
- Serve chilled.
