A winery just outside of Canterbury is the first in the UK to deploy Carbon Dioxide capture technology.

Defined Wines has been working with startup Cork and Capture to decrease the winery's emission of CO2 and to save money on essential imports of it.

Justine Larter reports, and a warning that this report contains some flashing lights.

00:00Winemaking with a sustainable twist.
00:03Defined Wines is a contract winery, producing wines from vineyards all over Kent.
00:09Here at their home in Bridge, the team have installed the UK's first winery carbon dioxide capture technology.
00:16This was developed by Cork & Capture and aims at cutting costs and reducing emissions.
00:22So what we do is we provide a service to wineries and breweries like Defined Wine that we're at today,
00:26which is to capture the CO2 that comes off tanks like this and we capture it through simple nozzles like
00:33this
00:34and we get the CO2 channeled out to our machine which processes the CO2
00:38and then makes it available to the winemakers or the brewers for reusing.
00:43But it's not just emissions Defined Wines want to tackle.
00:46Carbon dioxide is also essential for the winemaking process.
00:51So we use it to what we call gas our tanks.
00:53So before we fill a tank, we'll often fill it with CO2 to get the oxygen out because oxygen is
01:00the enemy of wine.
01:01And then we often find there's what's known as an ullage between the top of the wine and the top
01:09of the tank.
01:10And that gap we fill with CO2 throughout the year to make sure that there's no oxygen getting in and
01:16spoiling the wine.
01:17It's in these huge tanks behind me here at Defined Wine that their wine is made.
01:22The cork and capture technology takes the carbon dioxide from these tanks and into another network of pipes.
01:30But how does this impact the climate?
01:33We're doing something which almost nobody else in the whole world is doing,
01:38which is avoiding that emissions to the atmosphere and of course avoiding all the emissions related to importing CO2.
01:45So far, this winery is the only one in the UK to use this technology and it's taken a lot
01:51of teamwork to get to the launch today.
01:53I think it's really exciting.
01:55It's such a cool project to be, as you say, a world first.
02:03Getting this to work in Kent with the Kent businesses.
02:08Yeah, really, really, really excited about that.
02:10The portable CO2 tank at Defined Wines will be here for a little while longer
02:15before going on to cut costs and emissions at other wineries in Kent ready for next year's harvest.
