00:11We use it to keep something warm for hours and hours and hours.
00:14But how about using it to keep a toddy warm at a party?
00:21I feel like chardonnay is often a springtime in a pool wine.
00:25I'm making a toddy, a wine toddy, using chardonnay.
00:28And it's sort of lighter and crisper, but it has that warming sensation that we look for this time of
00:35year.
00:35Warm it up with a mixture of cinnamon, star anise, a little bit of honey, and a little bit of
00:40lemon.
00:40And just let all those ingredients kind of meld together.
00:54I take cheesecloth, a double layer, soak it in just simple melted butter, and I cover the top breast meat
01:02with this cheesecloth.
01:03Finish roasting with the cover off, and you get that match.
01:17By simply dropping them into boiling generously salted water, let them cook a little bit.
01:22Then you scoop them out, drop them immediately into an ice bath filled with cool water.
01:27Then you can drain them, cook them again, do whatever you want, or even just toss them and serve them
01:31as is.
01:32.
01:32.
01:46We'll see you next time.
