00:07:11it's raw meat and raw egg and anyone who's a bit delicate might struggle with it.

00:07:21It's chopped raw beef with all this little condiments that's added to it.
00:07:24It's somewhere easy to put together but also very difficult to balance the flavours.

01:15:14with quail egg and truffle flatbread.
01:15:18Beef tartare is one of our favourite classic French dishes.
01:15:22The flavour was good.
01:15:25That beautiful yolk on top of it was just gorgeous.
01:15:29But it was missing a little bit of seasoning and sauce
01:15:32to make this tartare perfect.
01:15:35It had all the essence of beef tartare,
01:15:37but we needed just to oomph those areas up.
01:15:41Obviously, being the first cab off the rank,
01:15:43you're going to learn a lot from tonight.

01:16:19It had flavour, but we didn't achieve that crust.
