10:05This dish marks my first gold medal in a competition when I went to culinary school.
10:10The competition required you to do a poultry, and my chef at the time was like, George, you
10:14got to go chicken, and I said, hell no.

10:20One of your teammates is making duck as well, so we're going to kill it together.

10:27Growing up as a Chinese American, we would go to the pecking duck house all the time, and
10:31it was just one of my favorite things, and it reminds me of my family and my childhood.
