07:51A perfect medium rare filet wrapped in mushroom duxelle, prosciutto, and flaky puff pastry.

09:38But you do your best when you're a little bit nervous, right?
09:40Beef wellington really is symbolic of traditional European cuisine.

09:50And this dish is not me.

10:21mushroom, that duxelle.
10:22Because mushrooms, they have a ton of moisture in them, and you need to cook that out,
10:25or else that pastry on the bottom is going to be soggy.
