00:00I told you last week that we had an idea that was going to change the entire
00:03smashed burger taco game and we're not here to disappoint. We're going to do
00:08Nashville hot chicken burger smashed tacos. Now I've got this new hot
00:13Nashville hot seasoning that I've been working on
00:16but until this one comes out you know feel free to grab whatever you like. You
00:19could use some gravestones that would be a perfect addition here and we're just
00:22going to let that in get into the chicken. Now be generous
00:26here that part is extremely important. You want to make sure that you really
00:30season this chicken because all the flavor is really coming from the seasoning.
00:34I feel like we have a pretty good level of seasoning there so next we just got to
00:37make our balls. We want to keep them about a quarter pound.
00:41I'm eyeballing it feel free to use a scale if you prefer.
00:44Now for our final touch we're again going to get our skull and mortar
00:47AP rub. If you don't have access to this again use whatever AP rub works best for
00:53you. That's going to help crust build and then
00:55we're going to hit it one more time with our Nashville hot seasoning.
01:01We're going to let this sit out for a minute and let those spices kind of
01:04mingle. In the meantime we're going to hop over to our flat top
01:07get that bad boy up to temperature and then we're going to wreck the entire game.
01:11Now we're going to pop these chickens down give them plenty of space
01:15and then we're going to drop the tortillas right on top of it
01:20just like before.
01:30Excuse me real quick, I need this.
01:36And then we're just going to flip again it should release easy when it's done cooking.
01:47So obviously the color is not the same on this it is going to be a lighter color you just
01:52want to
01:52make sure that it's cooked all the way through. You're going to have to just kind of eyeball it
01:57like this texture here like this is cooked that's cooked chicken and you're just going to have to kind
02:02of wait it out a little bit. But it's it's pretty thin so you shouldn't have any issues with cooking

02:07the way through. Now you don't have to cheese yours if you don't want to but again we're going to

02:11ahead and cheese ours. It's purely up to you if you're looking for a more traditional flavor. Now
02:16if you're good like me you will run out of cheese at the end and have just a little smattering
02:21because why would you come prepared?
02:34Again these taco forms make it nice man just to pop this right down in there and keep your shape
02:39and kind of keep some semblance of civility. Last week we made the best version of the smash burger
02:46taco to date when we mixed Big Mac flavors but we used all fresh ingredients. It slapped so hard
02:52I'm still thinking about it guys. Today we're doing this Nashville hot chicken and look at it it looks
02:58delicious. We're going to grab some bone shaker artisanal wing sauce you can also use it for a lot
03:02of different stuff. It's going to have some of those traditional Nashville hot flavors and we're just going
03:08to run it. You can put as little or as much as you want you can use really any hot
03:13sauce that fits your
03:14Nashville hot fancy if you will. Guys we're just going to do the same thing we did last week we're
03:18literally using pretty much the same ingredients. Lettuce then next guys we're just going to top it with pickles.
