00:00Want to enjoy Japanese yaki-dori without the fuss?
00:02Then ditch the skewers and savour this easy and delicious chicken yaki-dori donburi
00:07with crunchy vegetables coated in an addictive yaki-dori inspired sauce.
00:14The first step is making the sauce so grab a bowl and add 2 tablespoons of soy sauce,
00:202 tablespoons of mirin, 2 tablespoons of sake, 2 teaspoons of sugar, 1 teaspoon of honey,
00:27½ tablespoon of great garlic, and ½ teaspoon of Chinese style chicken bouillon powder.
00:34Mix it well and then set it by the stove ready for later.
00:41Next, take 300 grams of boneless skin on chicken thigh,
00:45that in 2 by 6 pieces, and sprinkle with a pinch of some pepper,
00:49and ½ tablespoon of cornstarch. Mix that by hand until evenly covered.
00:55Cornstarch will thicken the sauce slightly and help it stick better to the surface of the chicken.
01:01When that's done, heat a large pan on medium and add about ½ tablespoon of cooking oil.
01:07Once it's hot, add one roughly chopped zucchini,
01:10half a Japanese leek cut into 5cm pieces, and half a cubed bell pepper.
01:16I chose vegetables that don't need much cooking and taste delicious when grilled on a BBQ to match
01:23the actuary theme of the dish. The goal here is to char all the vegetables,
01:27so turn them occasionally to get those beautiful brown bits on the surface.
01:32Once they look like this, transfer them to a plate and set aside for later.
01:42We're going to reuse the pan, so add a bit more oil and then place your chicken into the pan,
01:48and place it with the skin side facing down so it can crisp up nicely.
01:53The skin will also release extra flavour, which will mix with the sauce and add depth.
01:59Once it's crispy, turn the chicken over and brown it on the other side.
02:10When there's no more pink visible, you can add your charred vegetables back in,
02:15along with the sauce we prepared earlier.
02:18All we need to do now is thicken the sauce.
02:21Stir the chicken and vegetables continuously to help
02:24coat all the surfaces with the sauce as it thickens.
02:35Once it's reduced and glossy like this, take the pan off the heat.
02:39Sprinkle your rice with shredded kizami nori,
02:42and then place a generous portion of chicken and vegetables on top.
02:49Garnish with chopped green onions, and a sprinkle of shichimi togarashi.
02:53And that's it.
