16:47Tokyo is one of the most modern and colorful cities in Japan.
16:51But for over a thousand years, Kyoto occupied that place.
16:56Yeah, I know, the names are similar.
16:58But while Tokyo is the futuristic center of Japan,
17:01Kyoto is one of the most traditional and historical cities in Japan.
17:06It's known as Japan's cultural capital.
17:09Let's play a game of spot the difference.
17:11Here are two photos.
17:13The first one is from Tokyo, and the second one is from Kyoto.
17:17Can you tell what is the main difference between both?
17:20Hold that thought for one more second.

17:24The first one is from Asakusa, a neighborhood in Tokyo.
17:28While the second one is from Kyoto.
17:30What would you say is the main difference here?
17:35Well, you can probably guess where I'm headed.
17:38If you didn't figure it out, I'll spell it out for you.
17:41The main difference is in the colors.
17:43If you've ever had a chance to travel around a bit,
17:46you've probably noticed how cities have certain color themes.
17:50Like Rome is terracotta, and Paris varies in tones of gray and sepia.
17:55Looking at these images, one can see that Tokyo is bright, electric, and looks even a bit chaotic.
18:02And Kyoto is monochromatic, and gives the impression of being calmer and more peaceful.
18:08It's fascinating to see that what causes this distinction between both cities has to do with a certain landscape law.
18:15You see, in 2007, Kyoto passed a new law prohibiting colorful street signs.
18:22The law also wanted to standardize overall constructions to make the city look more homogenous.
18:28Since Kyoto was Japan's capital city for such an extended period of time,
18:33it was built using traditional feng shui architecture and principles.
18:36That's why so many of the buildings have that traditional Asian shape to them,
18:41the one with the curvy ceiling, like you see in the Mulan movie.
18:47Sure, this style is very far from what modern architects are doing today.
18:51If you take a look at Tokyo, you'd see glass skyscrapers rather than these old buildings.
18:57But that's all part of a bigger plan, set in motion by something called the Miyako Landscape Guidelines.
19:03The municipality's main argument to pass the law was that Kyoto was losing its unique landscape due to Japan's modernization.
19:13If Kyoto were to follow in Japan's footsteps and build humongous skyscrapers,
19:19citizens would lose their view of the three mountains that surround the city.
19:23And let's face it, nobody would want that to happen.
19:26Plus, it's nice that you can go to different cities in Japan and notice that they are unique in their
19:32own way.
19:32If the landscape law was to be effective in all of Japan,
19:36we wouldn't get to see architectural marvels such as the Tokyo Sky Tree and the Asahi Flame Building.
19:45Now take a look at the Akihabara district in Tokyo.
19:49It is known as one of Japan's most modern neighborhoods.
19:52It's filled with top-notch technology at every corner.
19:56And yes, it's also filled with signs everywhere.
19:59If we compare it with Kyoto after the passing of the new law,
20:04the first thing that would have to go are the rooftop signs.
20:07Oh, and flashing and moving lights are also illegal there now.
20:12This Kyoto Starbucks also illustrates what I'm talking about.
20:16If you were strolling along the bucolic streets of Kyoto's countryside,
20:20searching for a place to get a cappuccino,
20:23you'd miss this coffee shop completely.
20:25I think we can agree that the traditional Starbucks logo was made to call attention,
20:30with that crowned siren-like creature supported by a very green background.
20:35In other places in Japan, it still looks like this.
20:38But in Kyoto, the brand went above and beyond to respect the new guidelines
20:43and produce this beautiful wooden logo.
20:46And a little plaque that says,
20:48This building has lattes.
20:50Yes, indeed.
20:53There are multiple examples like this.
20:55In Kyoto, the 7-Eleven doesn't have its traditional red, orange, and green stripes.
21:01Its logo was changed to black and white.
21:04You can think that's a doll, but I think we can agree to disagree.
21:08It looks perfect when you look at its surroundings.
21:11Oh, and what about McDonald's, the world's most famous burger franchise?
21:16It kept its yellow logo, but took the red out of the background.
21:20In terms of the color palette allowed,
21:23the law uses the Munsell color system to determine which chroma levels are acceptable.
21:28Usually, the faded version of strong colors, like red, black, green, and so on, are accepted.
21:35Now, imagine if they adopted a Wes Anderson palette.
21:39It would look like a toy city, that's for sure.
21:43At first, vendors and shopkeepers felt disturbed by the new law.
21:47They didn't understand why they had to change their branding for the sake of some aesthetic the city was trying
21:53to preserve.
21:54But with time, they not only came to terms with the new law,
21:58but could already see the benefits of it for their brand success.
22:02You see, this helped turn Kyoto into an even bigger tourist attraction.
22:06Tourists felt like they were traveling in time, sort of.
22:10Some tourists even liked to dress up in traditional kimonos and walk around like geishas.
22:16The municipality also began an award system to compensate the shops and brands that had done their homework well.
22:23Of course, the camouflaged Starbucks won an award back in 2018,
22:28as did Sagawa, a major delivery company in Japan, back in 2012.
22:33It's not only shops that needed to adjust to the new guidelines.
22:37Things such as vending machines and post offices also needed to be toned down.
22:43Again, the idea is to make the city more visually coherent.
22:47And they sure help.
22:51Now, what happens if you don't follow the rules?
22:54Well, the people who chose to ignore the landscape law can spend up to one year in jail or pay
23:00a huge fine.
23:02We can also compare the differences inside Kyoto itself.
23:06Around the city center, the landscape law is less strict.
23:09So you'll find taller buildings and even bigger and more colorful signs.
23:14But as you leave the center and move towards smaller cities in the countryside,
23:19the law is much more strict.
23:21It's especially strict around the UNESCO heritage sites.
23:25In case you're not aware, there are 17 heritage sites in Kyoto.
23:29Yep, that's a lot.
23:30But that's what makes Kyoto so unique.
23:33Now, welcome to the neighborhood of Pantolcho.
23:37This neighborhood is a good example of how the landscape law changed the city's mood over the years.
23:43Pantolcho is a cute alleyway in Kyoto that spans over several blocks.
23:48If you look at this Google Street image from 2009 and this one from 2023, you'll see clear differences.
23:55For starters, the huge sign at the entrance of the alleyway is gone.
24:00And so are the wires hanging from the tops of the shops.
24:03The pavement was redone and the big store signs disappeared.
24:07It's much cleaner.
24:08At night, the alleyway turned into the perfect spot for atmospheric dining,
24:13since its legislation decided to rule over the type of lighting allowed in the neighborhood.
24:19This is what it looks like at nighttime.

24:25I can't help thinking that this landscape law contributed a lot to Japan's minimalist architecture.
24:31Although images like these ones in Tokyo are far from the idea we have of this minimalist aesthetic,
24:39Kyoto falls right into place with it.
24:42How about we take a quick look inside one of these establishments?
24:45The Starbucks we mentioned earlier also invested in turning its interior design local.
24:51It's the first-ever Starbucks where you can drink tea on a tatami floor.
24:56You can sit cross-legged, like many Japanese people do, and enjoy a delicious hot beverage.
25:02I must say I quite like the new Kyoto.
25:05How about you?
25:07So, you're watching your favorite cooking show, when suddenly, the star chef adds a pinch of salt to some jam
25:14that's supposed to go into a dessert.
25:16You pick up the phone to call and complain, but right then the chef explains.
25:21It turns out that adding salt to fruit is a common thing in different cuisines across the world.
25:26Like in Mexico, they like to spice up mango and citrus fruits with salt and chili powder.
25:32You can try mango with a shrimp taste in the Philippines and salted watermelon in the southern states.
25:38So, how does it work?
25:40Well, let's say you're eating a raw mango sprinkled with salt.
25:43With the first bite, you notice the salty flavor, and the sweet, fruity taste is then slightly delayed.
25:50It feels as juicy and amazing as ever.
25:53It's most likely because salt affects the sweet taste receptor for sugar, and then really magic happens on a molecular
26:00level.
26:00One study even found that we have more sugar detectors in our taste cells than scientists previously thought.
26:07One of those detectors must direct sugar to a sweet taste cell when it gets in contact with salt.
26:12You can try and put salt on any fruit you like, but the effect will be different.
26:17Salt can make sweeter fruits like cherries and strawberries even sweeter and balance the flavor of grapefruit, pineapple, and watermelon.
26:24Just take a ripe fruit and slice it the regular way, and sprinkle the pieces with salt.
26:30Large, flaked sea salt might taste more intense, plus it looks more beautiful.
26:35After 10 minutes, your gourmet dessert will be ready.
26:38So, you need to chop up a heap of iceberg lettuce, but that tough core in the middle doesn't want
26:44to leave.
26:44Just hold the lettuce head in both hands with the core end down and slam it against a cutting board
26:51or some other solid surface.
26:52Not your brother.
26:54Now, you should be able to pull the core right out of the bottom and slice the rest of the
26:58lettuce without a problem.
27:00The next time you take butter out of the fridge and struggle to spread it because, you know, it's hard
27:06as a rock, reach for your grater.
27:09With its help, you'll easily flake off tiny pieces of butter that will melt instantly on a warm toast.
27:15You can also spread them much easier on cold bread without putting your sandwich in the microwave or waiting for
27:21a while to soften the butter.

27:28When you're frying something, you first heat the pan and then put the food on it, right?
27:32Well, this logic won't work if you want to make your bacon crispy.
27:36On a hot pan, the meat will cook before the fat can melt out of it.
