00:02Hello, I'm Maggie Mackenzie and I want to show you how to make the most from your Sunday roast
00:07and stretch it out to two more tasty family meals on Monday and even Tuesday.
00:12Creating meals from your leftovers definitely doesn't mean second best.
00:16All you need to do is think before you throw.
00:19Yesterday I made the most delicious roast lamb dinner for my family
00:22and today by using the leftovers and a few store cupboard essentials
00:26I'm going to whip it all up into a lamb and vegetable curry and some delicious lamb souvlaki wraps.
00:32Let's take a look at the ingredients you'll need.
00:35For the curry we're using some leftover roast lamb cut into bite-sized pieces,
00:40some lamb stock made with a stock cube, half a pack of freshly chopped coriander,
00:45an onion, red or white doesn't matter, whatever you have,
00:48some butternut squash chopped up, some aubergine cut into bite-sized pieces,
00:53a pack of either sugar snap peas or mange tu,
00:57200ml be-good-to-yourself natural probiotic yogurt
01:01and two tablespoons of rendang paste.
01:04Heat a little oil in a large frying pan, add your onions,
01:09just cook it for a few minutes until it softens up, add your curry paste,
01:15then add in your butternut squash and aubergine.
01:19You'll need to cook the butternut squash and the aubergine for about 10 minutes.
01:24Then after 10 minutes, you pour on the stock,
01:30bring it all up to the boil and let it simmer very gently for about 20 minutes.
01:35The squash and aubergine are almost there.
01:39Now add the lamb and the mange tu for the last few minutes.
01:44Then stir through your probiotic yogurt and the coriander.
01:50All done now.
01:51I'm going to serve that with warm naan bread and some boiled rice.
01:58Now for our delicious wraps, you'll need one red onion, finely sliced,
02:03a clove of garlic, finely chopped, some leftover roast lamb,
02:08be-good-to-yourself tortilla wraps, a large salad bowl,
02:14a pot of tzatziki and some dried mixed herbs.
02:19So here's how to make them.
02:21Heat your oil in a large frying pan and sauté the onion and garlic
02:25for a few minutes until it's just nicely softened.
02:31Then add the lamb, add in the dried herbs
02:35and just stir through for a couple of minutes over the heat until warm through.
02:42According to a recent study by Sainsbury's,
02:44it seems that a large number of families, around 85% in fact,
02:49cook a roast dinner each Sunday.
02:52However, a third of them admit to regularly cooking too much food at mealtimes.
02:57That's why recipes like this that use the most of your leftovers
03:01are such a great idea as they help to reduce the amount of food that ends up in the bin.
03:06Now I'm going to assemble my wraps.
03:09First layer is your salad.
03:12Then put your lamb mixture on top of that.
03:16Then on top of that goes the tzatziki.
03:19Spoon it over.
