Inari sushi is a Japanese tofu pocket sushi recipe that fills sweet savory aburaage with seasoned sushi rice for a simple meal, snack, or bento dish. The tofu pockets are usually simmered in soy sauce, mirin, sugar, and dashi until they become tender, juicy, and full of umami. Warm short grain rice is mixed with rice vinegar, sugar, and salt, then gently packed into each pocket without crushing the grains. Classic inari can be served plain, but modern topping ideas make it more colorful with salmon, tuna mayo, avocado, egg, cucumber, sesame seeds, ikura, shiso, nori, edamame, pickled ginger, or spicy mayo.
