00:00I bet you never had a brownie pound cake before. A luscious fudgy brownie mixed with a vanilla
00:06butter mcpound cake swirled to perfection covered with a brown buttercream cheese glaze. This video
00:12I'm going to teach you how to make this from scratch and you will have all of my tips and
00:15tricks in order to achieve this pound cake. So the first thing I'm going to do is I'm going to
00:20sift my white lily all-purpose flour. The recipe to this cake is in my southern pound cakes ebook.
00:25The link will be in my bio but it'll have the full recipe and instructions and measurements
00:29everything that you need. We're going to sift the all-purpose flour and we're going to add our salt
00:33and baking powder and place that to the side while we work on the rest of the pound cake. So
00:37I got
00:37some sugar going in. This is pure cane granulated sugar. Some softened room temperature butter and
00:44we're going to mix that on low speed till everything is combined. We don't want the sugar to go
00:48everywhere but you're going to mix that and we're looking for a light white color. You're going to
00:52see exactly what I'm talking about coming up. This is the white color that you're looking for and this
00:57only can be achieved if you mix for around five to seven minutes and make sure that you stop and
01:03you know scrape down your bowl. You don't want your butter to be sticking to the bottom. You want it
01:08to
01:08be mixed well and you want it to emulsify. So make sure you stop your mixer and you know kind
01:12of scrub
01:13it now. Next you're going to go in with your eggs one at a time and you're going to make
01:17sure each one
01:17is combined before adding in the next egg. This cake is incredibly moist so you're going to need my
01:23secret method in order to you know make sure that the cake comes out clean. It doesn't get stuck to
01:28the pan. So I am excited to share that with you guys but you want to scrape down your bowl
01:32when
01:33you add it in your egg. So about halfway through just give it a scrape down making sure that everything
01:37is fully incorporated. So now once I have all of my eggs mixed in and it's properly emulsified I'm
01:43going to add some vanilla extract to some buttermilk and what I'm going to do is alternate this vanilla
01:48buttermilk mixture with our flour mix that we did at the beginning of the video. Remember you want to
01:53start and end with flour. It is super super important. This crate is incredibly moist so you
01:58do not want this cake going wrong by doing your wet before you're dry. So definitely coat your mix in
02:04flour. That is super important and this is what you see me doing here. But like I said at the
02:09beginning
02:09of the video this cake is super moist and is also dense and fudgy. It's like a marble pound cake
02:18taking it to the next level. It is so delicious. So you see me here adding in a third of
02:23my flour
02:23mix and I'm just alternating that with my vanilla buttermilk mix. And remember we're starting to end
02:28it with flour. Make sure you keep those in mind. But you will have the full recipe in my ebook
02:33that
02:34will actually just outline everything for you guys so that you guys don't forget nothing. Also you don't
02:39want to go over a low speed whether you're using a hand mixer or a stand mixer. Make sure that
02:45it is
02:45always on low speed so you don't develop any gluten. So now get your favorite brownie mix. We're not going
02:51to be using all of it but we're going to be using a good portion of it. And you just
02:54follow your
02:56box's instructions and you just see me making up the brownie mix. And now here comes the important part.
03:01The part that you need to pay attention to the most. You want to spray your pan down with Pam's
03:06baking spray. You want to make sure it's fully covered. And also you want to add some sugar.
03:11And you want to use it like you would use flour that you are coating your pan with. So you
03:16have
03:16your pans breaking spring and then you just want to add your sugar and kind of dust it around. I
03:21did
03:21not do that and you're going to see that it kind of stuck a little bit. So just for your
03:25um I forgot
03:26to do it. So just for your your pound cake make sure you dust it with some sugar. So now
03:31you see me
03:31alternating between the vanilla buttermilk pound cake and the brownie mix. So as you can see I'm kind of
03:38alternating which side that I put it on as I'm adding my vanilla buttermilk pound cake. So I was
03:43trying to do it in layers. Kind of put you know a couple of scoops of brownie to the side
03:48from the
03:49left to the right. And then when I uh you know put some more vanilla buttermilk pound cake batter on
03:55top
03:55of that. Try to alternate sides. But as you can see you know it kind of just moved to the
04:00top of the
04:01cake. I was trying to create that marble effect but it's okay though. Um you know if you guys have
04:06a
04:06two-pick you can kind of swirl it around. But you know just since it's going to bake up you
04:11know I
04:12don't know for some reason I guess because it's super super fudgy the brownie mix kind of goes all
04:17the way to the top. Even though you can clearly see me just you know layering it and mixing it.
04:23But sometimes it just does that. So um I don't know if it's going to happen to you. But I
04:27just
04:27want to put that out there. But if you want more of a layering effect maybe put a little bit
04:32more
04:32pound cake mixture um in between your brownies or your brownie layers. And maybe that'll help it
04:38not sink all the way to the top of the cake. Um as you can see you know what you
04:43will see at the end
04:44of the video. You're going to have a little bit of brownie mix left over. So just kind of put
04:48that
04:49in the refrigerator or bake it off. You know it's just regular brownie. And um once you bake this on
04:54325 it's going to come out looking like this. Now mine did kind of get stuck to the pan because
04:59I
05:00didn't douch it with sugar. But that's okay. So this um actually this vanilla uh glaze is in
05:06the pound cake recipe. Well all I did was brown some butter and add a scoop of cream cheese to
05:12it.
05:12So I browned the same amount of butter that's in the vanilla frosting recipe. And I just add
05:17two tablespoons of cream cheese because I want it a little bit thicker. So it can kind of you know
05:23you cover up the blemish of it being stuck to the pan. Which really kind of broke my heart. So
05:28make
05:28sure you guys are actually coating your pans with sugar so you don't have that same problem.
05:32But you are going to want to whisk it. And you want to make sure it's well dissolved before adding
05:36in your powdered sugar. Most people sift a powdered sugar. I never had any problem with having clumps
05:42or having lumps in my uh glaze. But if you do have that make sure you are mixing your frosting
05:48in a
05:48microwavable uh bowl. So that way you can you know kind of heat it up in the microwave and get
05:54rid of
05:54those lumps. But as you can see this glaze is beautiful. It is thick. It is glossy. It's full
06:00of brown butter and cream cheese flavor. And as you guys can see this pound cake is delicious. Let me
