00:06Hey guys, it's Yuto here from Sashirecipes.com and today I'm going to show you how to make
00:11a popular Japanese salad dressing called Goma dressing.
00:16This recipe is enough for one medium sized salad and only needs 6 ingredients, 2 tablespoons
00:23of white sesame seeds, 1 teaspoon of soy sauce, 1 teaspoon of rice vinegar, 1 and a half teaspoon
00:30of sugar, 1 teaspoon of sesame oil and 2 tablespoons of Japanese mayonnaise.
00:38So first I'm going to toast the sesame seeds.
00:41Grab a frying pan and pour the seeds straight in.
00:45You don't need oil or anything, we're just going to toast them dry on a medium high heat.
00:52Even if they're already toasted, a bit of extra toasting will intensify the sesame flavour.
00:59We want them to become a bit golden and really be able to smell the sesame fragrance.
01:06Because the heat is quite high, make sure you keep moving them around to stop them burning.
01:11I like to shake the pan around so that the seeds toast evenly.
01:16Ok, it's smelling great and the colour is just right, so let's move on to the next step.
01:23Next I'm going to use a mortar and pestle to grind the sesame seeds into a fine powder.
01:30Not only will this make the sesame seeds mix in more smoothly with the dressing, but it
01:36also helps release even more delicious sesame flavour.
01:41This is actually a Japanese style mortar and pestle.
01:44The mortar is called Suribachi and the pestle is called Surikogi.
01:49The Suribachi has these vertical grooves running up the sides which create a rough surface that
01:56catches herbs and spices.
01:59The friction stops them from moving and makes it really easy to grind things down in just
02:06a few minutes.
02:07You could also use a coffee grinder or if you're making a large batch, you could use a food processor
02:14instead.
02:15So the ground sesame is done.
02:17In Japanese it's called Surigoma, can you guess what Suri means?
02:22Finally, we can mix the sauce, take a small bowl, add your ground sesame seeds, soy sauce,
02:33rice vinegar, sugar, sesame oil and Japanese mayonnaise.
02:49Then just mix them up.
02:51This dressing is very popular in Japan, you can use it on pretty much any salad, you can
02:57also use it on noodles or even as a dipping sauce too.
