for the brownie center:
½ cup salted butter, melted (113g)
¾ cup granulated sugar (150g)
⅔ cup cocoa powder (65g)
¼ tsp salt (1g)
½ tsp vanilla extract (2g)
1 large egg (50g)
1 cup all-purpose flour (130g)

for the cookie dough:
¾ cup salted butter, softened (170g)
¾ cup packed brown sugar (150g)
¼ cup granulated sugar (50g)
1 large egg (50g)
1 tsp vanilla (5g)
2 cups all-purpose flour (240g)
1 tbsp cornstarch (8g)
½ tsp baking soda (3g)
¼ tsp salt (1.5g)
& chocolate chipsinstructions

in a bowl, mix melted butter, sugar, cocoa powder, and salt until thick and smooth. add vanilla and egg and mix until glossy. stir in flour until a thick dough forms, then fold in chocolate chips. set aside.

for the cookie dough, cream the butter and sugars together until smooth and slightly fluffy. mix in the egg and vanilla until fully combined.

in a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. fold the dry ingredients into the wet just until combined.

scoop the cookie dough into 8 portions. take each portion and split it in half, flatten one piece, place a brownie ball in the center, then cover with the second piece of dough and seal the edges. shape into tall mounds and flatten the tops slightly.

bake at 375°F for 11–14 minutes, until the edges are set and the centers are still soft. baking time may vary. let cool on the pan to set.
