13:11marinated in garlic, lemon,

13:15and we made sort of a little mint salsa verde jock.

14:03So this one showcases the Nelson Savant hop.

14:49the sweetness in the sausage and what you've used in there,
14:51that has got to be the perfect match.

19:48So that's, yeah, pale ale malt, and we've got a light crystal malt.
19:51What's the difference between the two?
19:52The pale ale malt will be like the majority of what we'll use.
19:56You get kind of a light, bready, crackery kind of character from it.
20:00And then you use little bits and pieces of other specialty malts.
20:03So a light crystal add a little bit of caramel.
20:05It's like popcorn.

20:07What we're doing here is trying to find which flavor beer we're going to be playing with.

20:12With the hops, then we've got all the different flavor profiles.
20:15And we can put them in different parts of the room, then we can get all the flavor fiction.

36:15into the soup.

36:17But because of the size
36:18of my pot,
36:18I'm gonna just keep it
36:19on the bone,
36:20and I'm gonna do some
36:20big pieces and push it.
