00:08Almost anybody can be taught how to make a good cocktail, but my work is the thing that I do
00:17to
00:17change people's day. Those moments of being a human being, you can't measure that. We created
00:24a diploma so that you could carry forward this torch. So there are five tests and you have to
00:30pass all five of them. It's intense. It's highly technical. It's like getting your PhD in the
00:36spirits world. You do not show up to bar five day and expect to pass if you haven't been studying.
00:45This is an industry I've been devoted to for years. I have a very competitive side of me.
00:50Nervous is an understatement. It's mentally and physically fatiguing. Your nose dries out from
00:55doing all the tasting. Halfway through day one, they're like, what did I sign up for? I don't know
00:59enough. That's way outside of my realm of things to do. I just never actually thought that I could
01:05see myself here. The students have put so much pressure on this moment. You don't want to crush
01:12people, but you have to judge them according to the standards because we have specifics and bold.
01:17This can make or break you up. If you're not a square or rectangle or round, you don't fit in
01:24those holes, where do you go? Hospitality is one of the places where you go. Bartenders are
01:29empathetic people. That's just who we are. You don't get into bartending because you hate humans.
01:35To be able to connect with bartenders from across the globe that come here,
01:39it's an amazing opportunity. It truly is life-changing. It's not just about making dreams,
01:45but it is a craft and it's a very skilled trade. Serving people is a special thing.
01:52Not everybody can do it. All right. Good luck, everyone.
