00:47So, my name is Jason Ignacio White. I'm a former employee at restaurant Noma and I'm standing here today
00:52in front of Paramore Estate against restaurant violence and exploitation in solidarity with my peers around the world.
00:59When I worked at Noma, I worked six days a week, sometimes seven.
01:03I would work from like 7 a.m. until like one in the morning, no vacation, no time off,
01:09a lot of responsibility and some big dreams being broken along the way.
01:13How many years did you?
01:15So I worked there for about five years, like four years and a half roughly.
01:18I was the director of fermentation at restaurant Noma, but I was also the head of production
01:22and development in the fermentation lab.
01:25Yeah, and so basically I had experienced some conditions at Noma that were unacceptable,
01:29but it was difficult for me to speak up about it through some soul searching and some traveling.
01:34I encountered some more victims of Noma on my travels and that gave me the courage to speak up
01:39because I was tired of having to hear these testimonies without resolution.
01:43About four weeks ago I stood up and I explained what my story was on my social media account
01:48and hundreds of people around the world who experienced violence at Noma stepped up
01:52and then thousands of people who experienced violence at the restaurants around the world
01:55stood by us as well, giving their testimonies.
01:58We started a website, New York Times wrote about it, and now all Noma sponsors have dropped out.
02:03He stepped down from being the chef, but we want more transparency, more solutions for the victims.
02:07Restaurant Noma has been open for almost 23 years now, if not like maybe a little longer,
02:11and the amount of abuse that has been passed along through that restaurant for two decades,
02:16a PR stunt of a video he posts on Instagram isn't enough for resolution or justice.
02:22I mean, I knew it was never just me, but the problem is when you're stuck in the cycle of
02:25abuse,
02:26working like extreme amount of hours and also your family depends on you,
02:29some things can get very confusing.
02:31The restaurant industry also hasn't really been known for encouraging people speaking up.
02:36A lot of times when people speak up in restaurants about the conditions that they're in,
02:39they treat that bravery as weakness.
