00:00Good afternoon everybody from the beautiful Florida Keys. We got Brookie and Lily and for
00:06the next few days this is going to be our view every single morning, afternoon. We are at a house
00:13called Hooked on Avocado here in Marathon, Florida. We got Brookie's mom enjoying the pool,
00:19we got the boat in the backyard, fillet table, and this is actually our third day of fishing here.
00:25We've been getting on some really good mutton snapper, but today the goal is to try to catch
00:30some black groupers. So we got a few different little tactics I'm going to show you guys, but
00:35look at this view. We got this house for the next week, just tons of fishing with the family,
00:42going on the boat, so let's hop on board and head on out.
01:00So we just came out here, we are staying in Marathon, looped out the backside through the Gulf of Mexico,
01:09beautiful scenic boat drive on the blue water, and we actually came out of the seven mile bridge,
01:16so those of you guys aren't familiar with it, it's literally seven miles long, so if you decide that
01:21uh, you needed to make a turn before it, you gotta go seven miles one way before you turn around.
01:27The Keys is just this beautiful chain of islands linked by a bunch of different bridges and keys.
01:32So we're out here just on the edge of the reef, so if you look behind me, you can just
01:37barely make
01:38out the seven mile bridge on the horizon, we're about four miles offshore. Here's the reef, so this is
01:44that hard ledge, and it'd be anywhere from 70 to 100 feet, and just on the outside of it is
01:49sand,
01:50but if you find little gems like this, where you find rock piles on the outside of the reef,
01:58where most people don't fish, most people fish right on the reef, right on the edge,
02:02there's a lot of fish congregated around there. So I'm just driving around, marking what I mark,
02:08and I don't want it spot-locked right on top of the rock, because grouper, the first thing they like
02:12to do once they get hooked is find a rock and break you off. So we're going to go up
02:17current,
02:17drop the trolling motor, and start chumming away. See that right there? That looks like a bunch of big
02:23ball of yellowtails to me that are sitting on top of the rock. I like to bottom fish close to
02:29the
02:30structure, but not on top of it, and when you chum, you're bringing the fish to you. So normally,
02:35they feel safe on the rock, but if you entice them with a little chum, then they'll come to you,
02:40and when you hook them, you're not going to get broke off. But we've had some great marks at this
02:45spot already. We got standard blocks of chum right here, and we're going to go into this really big
02:54hole chum bag, because I want a lot of chum to flow out. We're not trying to be conservative with
02:58this,
02:58because we don't have a lot of time to fish. Now that chum is going to flow down all along
03:02this reef
03:03line, yellowtails, muttons, grouper, mackerel, all sorts of things fighting that chum. It's our third
03:09day fishing, and we had amazing mutton snapper catches, and now we're going to try and see if we
03:17can target a species and get it. That would be awesome if we can get a grouper or two tonight.
03:28So that's the object. Okay, so when we first got to this house, we put out some pinfish traps
03:35that the owner was so kind enough to leave for us. So we brought some pinfish out here,
03:41some live gargoyle. I'm going to take my pinfish and hook them right here in the top.
03:478-0 Mustad circle hook, 60 pound leader, about 20 feet of it.
03:53Let that drift back. And I always like to let my baits down nice and slow. This way they don't
04:01helicopter on the way down, because our leaders are so long.
04:06You on? That was quick.
04:10On a gog? Yeah.
04:14Whoa.
04:20It's scoping up top. That was down there for, uh, I mean, I, I know sooner hit bottom,
04:26and, uh, and it was messing with it. Well, we're going to deal with the shark,
04:33and then we'll get back to you.
04:37Okay, live pinfish on bottom.
04:45That was weird. It was going up top like a shark ate me too.
04:48So far, two sharks. Not good.
04:53All right. I took some chum, let it fall out, mixed it with some sand,
04:59and we're going to make a nice sand ball. So what the sand does is it really compacts your chum,
05:07and makes it heavier, so it sinks to the bottom. So I'm just making a nice little ball,
05:11because that chum that we have in the bag is flowing up top, and by the time it gets to
05:16the
05:16bottom, it's thousands of feet behind the boat. But just dropping little sand balls,
05:23and it's going to work its way down and raise all those fish up.
05:34All right, and while we're trying to catch our grouper, I just got a little jig head out,
05:39a little yellow tail rod, and that's exactly what I got.
05:43I know I don't. I got a rainbow runner. Look at this thing. So this is a little rainbow runner,
05:50and actually what he's going to become is a grouper bee.
05:57These things are absolutely delicious for sashimi too, but I'm going to drop them down.
06:08Nice big rainbow runner. Try to get a grouper on them. Grouper love big live baits and big dead
06:14baits, but I'm going to put them in the live wall until I decide what I want to do with
06:17them.
06:17So since this rainbow runner is so crazy, I cut his tail off because they are very
06:21fast swimming fish. And I'm going to hook them right here on the top of the lip.
06:29So he's still kind of alive. He'll twitch down there, but I cut his tail off so he doesn't move
06:34too much. Just free lining that jig head back in the chum slick. That's another one of those
06:39rainbow runner things.
06:44A blue runner. A lot of life here. When you put chum out, you never know what's going to swim
06:48up
06:49in the slick. That's another good grouper bait. A little live blue runner. We're going to put him
06:54in the well. So what I've been doing is we got our chum. We got our sand ball. Those yellow
07:01tails,
07:01they sit kind of mid to high in the water column as that chum flows back. Just got a little
07:08mustad
07:08jig head and just been cutting up some chunks of goggle eye and drifting it back with the chum.
07:16So that way the fish just think it's another piece. And so far caught two different species.
07:21You want a little yellowtail rod? We could rig one up for you. Not yet.
07:28I think it's another blue runner. Yep. There's so much fun on light tackle.
07:40Brian's got his rod halfway up the ship. It's all right. We'll work around you. Don't worry.
07:47You get to play the father-in-law card for the rest of your life.
07:50I'm going to stay in the shade. I'm going to stay in the shade and watch my rod dip.
07:56So the same things happen twice in a row. Shark keeps eating our baits. So if there's that many sharks
08:03around, it's time to move. No sense in feeding them. Even if you do get a grouper bite, there's a
08:08good
08:08likelihood that a shark's just going to eat your grouper. So we're going to move.
08:24I'm getting a bite. Yeah, and my hand's full of sandball.
08:35I'm immediately in a rock. So we're definitely on the reef. On a live gog.
08:43Yep, we're in the reef. Live gog lie. And he's got me in a rock. Come out.
09:03We wanted to be close to the reef, but I got us a little bit too close.
09:23I have a fish. Oh my gosh, I did have a fish.
09:30I had a fish. On this rod, I put out the other half of that rainbow runner,
09:34and something unhilled it and took me into the reef immediately.
09:37You can see it's all scaled up, and eventually the hook just pulled butt.
09:42So it's a really good spot. Two bites within five minutes.
09:44We got to move like 40, 50 feet out towards the sand so that doesn't happen again.
09:55It's about a little, right? Yeah, so we're, uh, see where we're at right now.
10:02I'm off of the, this is where we caught the mountains yesterday,
10:05and then I just moved inside to be closer to the ledge, but we're real close to it.
10:14Yeah, it looks like a good one. No, uh, Victor's got a good fish out there.
10:27No idea yet. It's running towards the ledge. It's a good bottom fish.

10:38Yeah, we're about 28, and we've been shopping. It's a grouper. I don't think it's a mutton.
10:47You ready to grab the rod, Brian? Oh, no, no, we're fishing. I think, all right,

11:12We got no, no shortage of being able to catch those things. No, we catch the,
11:17we catch the muttons. No shortage there.
11:21Whew, he fought hard. I bumped up my drag even more for grouper, so I didn't let him pull any
11:26dragon.

11:3611, 10 pound mutton right there. Absolutely gorgeous. Right on the reef.
11:42I don't ever know when bottom fishing, if I'm being impatient or if I should move to a new spot,
11:49because when you don't get hits for a long time, you think to yourself,
11:53maybe this spot isn't good. But then you catch a fish like this, you know, you have baits in the
11:56water
11:56for 35 minutes. Sometimes it just takes fish to really find you. So we moved. And you got to be
12:03like super precise. Those groupers want to hug that ledge as much as possible. It's just inside of us.
12:09So I moved us 20, 30 feet towards it to try to entice some tea and get them to come
12:15out of their home.
12:17But this is going to be the last spot of the day. And we're just going to fish it hard,
12:20chum it hard, and hopefully we can pull one of these grouper out.
12:28Not sure if it was a shark or grouper, but it was running that way towards the reef,
12:33which makes me think it was a grouper. No fray from a shark. Could it just been a grouper that
12:39just pulled?

14:13We were just talking about how, you know, we had such a good first two days of fishing.
14:19Even really, Dennis made a great point. We first got down here on Thursday,
14:24but I wanted to get bait fishing out of the way. I called every local tackle shop to see if
14:28they had
14:28goggle eye. Nobody had it. So me and Dennis went out the very first night, caught 13 dozen for ourselves.
14:36That was a win. And then the next two days, four or five muttons, upwards of 10 pounds.
14:41And, uh, today only one mutton, but, you know, we're in uncharted waters that we haven't fished in a very
14:48long time.
14:49So we're going to find them and, uh, still having a lot of fun. I don't know if that was
14:53a shark.

15:23So this is only her second time fishing. That was way more than day two,
15:28but this is only her second time fishing on our trip.

15:41Just left our beautiful hooked on avocado house.
15:44And, uh, we couldn't fish yesterday. It was too rough.
15:46So we tried. We came out like four miles and bottom fishing is something where if it's too rough,
15:53you can't anchor properly,
15:54you can't use the trolling motor because you're just taking them over the bow.
15:57But, uh, we actually got Brook's brother on the boat too, Fisher.
16:01He's up there, that real tall guy.
16:03And, um, just put some baits out.
16:06Got the chum bag in the water.
16:07Going to start catching some yellow tails.
16:09And we got two days left to try to catch a black grouper.
16:12It's one of the things we came down here for.
16:14I'm feeling very confident.
16:16So we're going to make it happen.

21:41is a real special fish to share with all these people, and they are so beautiful.

25:28We've been fishing for five days reeling in sharks and amber jacks and some nice muttons.
25:36Got a couple of goliath groupers.
25:39Now I finally got my first black.
25:42Feels good because this is what we came to the Keys for.
25:46Trying different techniques and now we got a technique that works.
25:51That's two blacks in the boat at this spot and we're going to keep going.

26:17It's hard to say.
26:18I did exactly what your guys' fish did, but it could have been a shark or a grouper.
26:24No, but that doesn't mean I didn't get broke off on the reef, but it was probably a shark.

26:32Two groupers came out for a few hours, but we got to go home, put Lily to sleep,
26:37spend some time with the family, and I think we got one last day of fishing tomorrow morning.
26:43So, we'll see you guys back out there.
27:12This is the bigger of the two black grouper that we got.
27:14And I just flayed the smaller one for Brooks Channel.
27:18It wasn't that, this one's not that much longer, but they just get so thick and dense.
27:22They're like little bulldozers.
27:24And that's why we fished that heavy dragon, those big reels.
27:27Because when they want to get in the rock, there's no stopping.
27:30So, I'm going in with a seven inch Dexter soft grip knife.

27:42I wish I could say that I fillet more black grouper, but we don't catch that many.
27:47And that's why we spent so much time targeting these fish.
27:50Because we do have quite a bit of mutton snapper down where we live in South Florida.
27:56But black grouper are harder to come by.
27:59And that's just because we don't have the prolific reef.
28:02These guys love real hard bottom, good coral reefs, and just good live bottom,
28:10which the Keys is full of everywhere you look.
28:19Break through those pin bones.
28:22Okay, now over the rib cage.
28:27Down on the other side of the backbone.
28:33What I like about this knife too, it really flexes a lot.
28:37Contours to whatever fish you're filleting.
28:41Look at that.
28:42This is why we spend so much time chasing this fish.
28:45Look at how good this looks.
28:47This fish freezes well, vacuum seals well,
28:50eat it fresh, eat it in a few months.
28:53They have these big ridges, these big flakes.
28:56My favorite way to eat it is fried.
28:58I don't know how we're going to cook it, but just such a treat to have at the filet table.
29:05Just such a pretty pattern.
29:06You could really appreciate it.
29:07They got all this marbling, and when you first catch them,
29:09they're usually really lit up.
29:11As they sit on the ice, they get a lot darker.
29:14You can always tell it's a black because they got that distinct
29:18black trace on their dorsal and anal fins.
29:21And real rugged fish.
29:24When they feel pressure, they'll go under a rock.
29:26They'll flare out these gills, flare this dorsal fin, and it's impossible to yank them out.
29:37Okay, let's knock out this other side.
29:39And they also, they got that beautiful yellow on their mouth, always.
29:45Did you have cotton in the keys, Dennis?
29:48Yeah, it's probably my favorite part was diving the lighthouse.
29:52Yeah, we just got done with a nice little family dive at Sombrero.
29:57And it's nice because everybody gets to enjoy it.
30:00When you've been beating yourself up on the boat for six days in a row and it's just hot,
30:05it's so refreshing to hop in the water.
30:07And also just to see the life from below.
30:11You know, we're always on the boat yanking them up, but to actually swim with black grouper
30:16and yellow tails and a lot of the species we caught is pretty cool.
30:25There you have it, look.
30:28Two beautiful fillets of our black grouper.
30:33All right, now we skin our black grouper.
30:36Always line your knife up with the edge of the fillet table.
30:39And then I always have my left hand right at the blade so I can feel what it's doing
30:46and making sure I'm not tearing through any skin.
30:49And you'll see, as I lift this fillet up, look.
30:52No skin.
30:55And I could feel, one reason I love grouper compared to Snapper,
30:59I feel like they got way better oil content.
31:01You could feel it on your fingers and that fat is flavor.
31:05So now let's remove these pinbows.
31:17And that's it.
31:19So I'll see you guys back home.
31:21Cook this fish up.
31:22I'm just going to get this out of the way.
31:24This happened because I was trying to get a plastic bag under the sink
31:28and I whacked myself in the forehead.
31:29So I got a little Harry Potter scar.
31:31Literally 15 minutes before we started filming.
31:34So hopefully it's not too distracting.
31:37But it's about a week after our Keys trip.
31:40And we vacuum sealed a lot of the fish.
31:43Because you guys saw we kept a bunch.
31:45Gave some away.
31:46And when you vacuum seal fish, it actually goes...
31:49You can keep it in the freezer for months, especially deep freezer.
31:52The most important thing, pat those fish as dry as possible.
31:56And we removed as much bloodline as we could.
32:00You see a little bit there.
32:01That's the only part of the fish that would taste fishy, if at all.
32:05But this has only been frozen for about a week.
32:07So I'm not worried about it.
32:09We're going to start out.
32:11And most of this is grouper on our sheep ham.
32:13There's a few pieces of mutton.
32:15We're going to hit it with some Lawry season salt.
32:22On both sides of our fish.
32:24And you can see which pieces are the grouper.
32:26Because they're the real thick, flaky ones.
32:32Okay.
32:33So just some season salt and garlic powder.
32:36And what we're going to do for our recipe is I'm going to sear these fish real quick.
32:44Just let that seasoning adhere to it and give it some color.
32:49We're going to take it off, set it aside, and we're going to make this delicious poached fish
32:53with ginger, cilantro, basil, coconut milk, fish sauce, a bunch of good flavors.
32:59I'll walk you guys through it.
33:00So I'm going to season the other side and then we'll go on to the next step.
33:03So we're going to make this really delicious coconut broth that we're going to poach our fish in.
33:09The first thing I'm going to do is I'm going to take a good amount of cilantro right here.
33:18Put that in there into the little blender along with I'm going to take some basil and put it into
33:25our blender.
33:29Good amount of leaves in there.
33:31We're going to do the juice of two limes.
33:37So instead of just throwing my cilantro and basil into our sauce, I want to blend it.
33:43Just get every last little bit of flavor and I want the sauce to be pretty smooth.
33:48So that's why I'm doing this first.
33:50So the juice of two limes.
33:55Okay.
33:56And then we're going to blend this up.
34:01You take one whiff of this and then make a dying man.
34:04Well, just the freshness of cilantro and basil and lime juice.
34:08It's really going to just bring out a lot of fresh flavors in our dish.

35:06And you heard me say that we're going to poach the fish.
35:10So, but I don't like just plain poached fish.
35:12I like to give the outside of my fish a little crust, a little color.
35:16So real high heat.
35:17Just about a minute on each side.
35:19So we're not cooking it fully.
35:20I just want to give the fish another level of flavor.
35:31Just like that.
35:33A little bit of color.
35:48Now we're going to start on our broth for our fish.
35:51Some avocado oil.
35:53And then in here, I have diced yellow onion, red onion, yellow pepper, and red bell pepper.
36:04So to give our broth for our poached fish some liquid.
36:10I just got two cups.
36:11I'm making some chicken stock with this stuff.
36:13Some better than bouillon, chicken flavor.
36:16I'm going to pop it in the microwave for a little bit just so it melts and incorporates.
36:20And then we're also going to add some coconut milk.
36:34Peppers and onions are nice and sauteed.
36:36I'm going to go in with one shallot.
36:41We're going to cook our shallot and then this is equal parts of ginger and garlic.
36:50Pick all those flavors up.
36:55And we also got some jasmine rice going right here.
36:58Now a bunch of diced tomatoes.

37:17Tomatoes cooked down quite a bit.
37:18Now we're going to go in with one can of coconut milk.
37:28This is that cilantro basil lime mixture we had earlier.
37:32That's going in.
37:33Our chicken stock.
37:35Just going to use whatever's left in here of this sweet red chili.
37:42Just like two tablespoons of fish sauce.
37:47And I'm going to put in some cashews as well for some crunch and good flavor.
37:53So here's our mixture.
37:56There's a lot of flavors in there.
37:58So cilantro, garlic, ginger, all those bell peppers, cashews.
38:02You've got sweet, savory.
38:04You've got that little punch from the lime juice.
38:07Everything came together.
38:08Add a little cornstarch slurry just to thicken it up slightly.
38:12And now what we can do is we're just going to gently start putting our fish in here.
38:19And you can see that it's only about 25% cooked.
38:23Most of the middle is still not cooked.
38:27But we're going to just gently put these in here.
38:29And they're going to finish cooking in there.
38:42We've got a nice portion of jasmine rice.
38:51Oh yeah, look at that.
38:52Big piece of grouper.
38:55And then I've got to scoop the bottom.
38:58Put all those veggies and cashews and things.
39:01And we could just drizzle it right over our fish like this.
39:04And our rice.
39:06A lot of good flavors in there.
39:12Okay, first plate is ready for whoever's ready.
39:16Does it fall off the bone?
39:20Yep, we've got a super flaky grouper over here.
39:24And an amazing mutton.
39:28They both taste phenomenal.
39:30I didn't get any mutton on my plate yet.
39:32But the grouper is big, fat, chunky fish.
39:37Must have been the larger grouper.
39:41Tastes good.
39:42And they were difficult to catch.
39:45I think we fished for four days before we caught one.
39:49And then when we finally caught one, it was like, yeah.
39:53So, we don't get to eat grouper all the time.
39:56This is a treat.
