Sawaniwan is an easy Japanese vegetable and pork soup recipe that combines thinly sliced pork, fresh vegetables, and clear savory broth for a light but comforting meal. This dish usually uses dashi as the base, then adds ingredients such as pork, daikon, carrot, burdock root, mushrooms, cabbage, green onion, or leafy greens for texture, sweetness, and aroma. The pork cooks quickly in the hot broth, adding richness without making the soup heavy, while the vegetables soften and release gentle natural flavor. Soy sauce, salt, sake, or mirin can season the soup simply so the clean umami of the dashi stays balanced. The final sawaniwan is warm, nourishing, and easy to serve with rice, pickles, grilled fish, or other Japanese side dishes, making it a practical home-style soup for lunch or dinner.

00:00If you're craving a nourishing soup that is light yet packed with flavour, then you've
00:05gotta try this Japanese pork and vegetable soup we call Sawa Niyan.
00:13First we're going to blanch the vegetables, so boil a pot of water and prepare a bowl of
00:18ice water next to it. Once it's bubbling, add half a julienned carrot, one eighth of a daikon
00:25radish, which is about 100 grams, and 10 thinly sliced snow peas, and boil everything for about
00:3230 seconds. I use a mandolin slicer to cut the carrot and daikon so that they would be extra thin
00:39and cook quickly. After 30 seconds, transfer them to the ice water to stop the cooking process
00:48and help them maintain their vibrant colour. I'm going to reuse this pot to save on washing up,
00:55so discard the water and add 850ml of dashi stock.
01:02Bring it to a boil over medium heat. I recommend using homemade dashi or dashi packets for the best
01:09flavour. Once it's bubbling, add 4 tablespoons of light soy sauce and 4 tablespoons of mirin,
01:16then add 150 grams of thinly sliced pork belly and 4 fresh shidake mushrooms, also thinly sliced.
01:24We'll boil that for about 1 minute before adding the blanched vegetables from earlier.
01:32Drain the ice water and add the vegetables back in from here. Continue to simmer for about 3 minutes
01:38or until pork is cooked through and vegetables are softened to your liking. I don't like my vegetables
01:45to be too soft, so I find 3 minutes is about right for me. This is one of those recipes
01:51where the
01:52preparation takes longer than the cooking, but it's worth it because all the thinly sliced vegetables
01:57not only cook quickly, but they have an almost noodle-like texture to them. Mix occasionally,
02:04and then once 3 minutes are up, take it off the heat.
02:11Serve it up with a sprinkle of ground black pepper, and that's it. Extremely simple,
02:16yet tasty and satisfying Japanese sunny one.
