Nagasaki champon is a Japanese noodle soup recipe packed with seafood, vegetables, pork, and a rich creamy broth inspired by Ringer Hut style champon. This dish usually combines thick champon noodles with ingredients such as shrimp, squid, fish cake, cabbage, bean sprouts, carrot, onion, and pork, creating a hearty bowl with color, texture, and deep savory flavor. The ingredients are stir fried first to build aroma, then simmered with broth, milk or a creamy soup base, soy sauce, and seasoning so the flavors blend into a smooth, comforting soup. The noodles soak up the broth while the seafood stays tender and the vegetables keep a light crunch. The final champon is filling, colorful, and easy to enjoy at home, offering a restaurant-style Japanese noodle bowl with creamy broth and plenty of toppings.

00:00Nagasaki Champon is a vibrant noodle dish made with ramen noodles topped with pork,
00:05seafood and medley of vegetables served in a rich and milky broth.
00:09This recipe is a shortcut version inspired by the famous champon chain, Ringo Hat. Let's get started.
00:18First, heat a wok over medium and melt one teaspoon of lard. The lard has a sweet fatty
00:23quality that adds deeper flavour to the dish but you could swap it for batter or cooking oil if
00:29you prefer. Once it's melted, add 8 shrimp and 100g of thinly sliced pork belly. Season those with a
00:37pinch of some pepper and fry until they're lightly browned. Next, add 8 slices of Kamaboko fish cake,
00:47quarter of a thinly sliced onion, 100g of bean sprouts, 50g of roughly chopped cabbage, 20g of
00:56carrot and a few tablespoons of canned sweet corn. We're just gonna stir fry everything together
01:02until the cabbage is slightly softened and the shrimp and pork are cooked through. I personally
01:08prefer my vegetables to have a bit of crunch so I'm only gonna cook them lightly. Nagasaki Champon contains
01:15more vegetables than usual ramen but you can omit or substitute them according to your tastes. Mushrooms,
01:21green beans and even ham have been included in the version served at Ringo Hat. Once everything is
01:28cooked to your liking, take the wok off the heat and set aside for later. Next, we're going to make
01:33the shortcut version of the Champon soup. Take a saucepan and add 400ml of dashi stock,
01:40half tablespoon of soy sauce, one teaspoon of great garlic, one teaspoon of great ginger,
01:46and one teaspoon of oyster sauce. Eat on medium and mix it well to evenly dispersed ingredients
01:53throughout the soup. Nagasaki Champon was created in Nagasaki city during the mid-maid period,
02:01which is roughly around the late 19th century. It began as an affordable meal for exchange students
02:07before becoming the city's beloved soul food. The word Champon means mixture of different things,
02:13and it represents the fact that Champon dish contains many different kinds of vegetables and meats.
02:19Once it's hot and almost bubbling, add one tablespoon of Chinese style bouillon powder,
02:25and mix it until dissolved. Finally, turn off the heat and add 100ml of whole milk. Taking off the heat
02:36at this point will prevent it from curdling. You can reheat it right before serving if necessary,
02:42just don't let it boil. Finally, we're going to boil ramen noodles. If you have multiple burners,
02:50you can cook the noodles and broth at the same time. Make sure the water is rapidly boiling before
02:55adding the noodles, and cook them for the time stated on the packaging.

03:09Also, Champon typically uses slightly thicker ramen noodles. Drain the noodles and place them in serving
03:15balls. Pour the soup over the noodles, and top with the stir-fried ingredients from earlier.
