00:10hot, winters are mild, and rain comes at just the right time. Spain, Italy and Turkey are the
00:16traditional olive oil champions. Here some olive trees live for millennia. They can produce enormous
00:21harvests and demand is booming. It's doubled since the 90s with new markets like India and Pakistan.
00:26But production is sweltering. In 2023, extreme heat slashed Spain's olive harvest in half and prices
00:33shot up. So these Austrian farmers dared to dream. They planted hardier olive varieties from cooler
00:38regions. The first harvest was quite humble. Just enough for about 300 milliliters of oil.
00:44Baby steps. But these new places might help keep olive oil on our tables in a warming world.
