Homemade tonkatsu sauce is a sweet, tangy, and savory Japanese-style condiment that pairs perfectly with crispy pork cutlet, chicken katsu, croquettes, and fried foods. This recipe focuses on three easy ways to make the sauce at home, using pantry-friendly ingredients that can create the deep flavor usually found in classic bottled tonkatsu sauce. Common ingredients such as ketchup, Worcestershire sauce, soy sauce, sugar, oyster sauce, fruit, or mustard can be balanced to build a glossy sauce with acidity, sweetness, and umami. The key is adjusting the mixture so it tastes bold enough to cut through fried coating while still complementing the juicy meat inside. The final sauce is thick, smooth, and flavorful, making it useful for drizzling over tonkatsu, serving as a dipping sauce, or adding extra depth to Japanese-style fried meals at home.

00:01Hi, I'm Yuto from Suzashi and today I'm going to show you how to make three delicious sauces
00:06to serve with your Japanese Tonka support cutlets. Let's get started. I'm going to start with the
00:15most basic one. So grab a bowl and add 2 tablespoons of Worcestershire sauce, 1 tablespoon of soy
00:22sauce, 1 tablespoon of ketchup, a generous pinch of light brown sugar, and a tablespoon
00:30of sesame seeds. Mix all those together until combined. This is a pretty standard Tonka sauce
00:37that heavily relies on the flavour of Worcestershire sauce.
00:41Next I'm going to show you how to make a rich misokatsu sauce. This one needs to be cooked
00:48down so grab a small saucepan and add 100ml dashi stock, 1.5 tablespoon of mirin, 1 tablespoon
00:57of sake, 2 tablespoons of light brown sugar, 1 teaspoon of soy sauce, and finally 2 tablespoons
01:04of red hachou miso. This miso is made purely with soy beans and salt. It doesn't contain
01:11any other grains so it's naturally vegan and gluten free.
01:16Anyway, bring that to a boil over medium heat and stir until it becomes smooth. Misokatsu
01:22made with this sauce is actually a regional dish from Aichi Prefecture where I grew up.
01:28I might be biased but it's so good and I seriously recommend giving it a try.
01:33Okay, once it starts to boil, reduce the heat and simmer for about 10 minutes or until it has
01:39thickened. Stay occasionally and be careful splashing. When it looks like this, turn off
01:45the heat and stir in half a tablespoon of sesame seeds.
01:54Finally, I'm going to make a toasty and nutty sesame sauce. First, we need to toast 2 tablespoons
02:01of sesame seeds in a dry pan over medium heat. Make sure to keep moving the seeds to prevent
02:08burning. Toasting sesame seeds help bring out their flavour, though this sauce is quite intensely
02:14sesame flavoured. When they're nice and golden, transfer them to a mortar and grind them into
02:21a powder. For this small amount, I find grinding them by hand more convenient but for a large batch,
02:28you might want to use a food processor.
02:34Once it's more or less smooth, transfer it to a bowl and add 2 teaspoons of soy sauce,
02:392 teaspoons of washed soy sauce, 1 teaspoon of sugar, 2.5 tablespoons of water and 1 tablespoon
02:48of ketchup. Mix those together until smooth and that's it.
