Shirunashi tantanmen is a soupless Japanese tantanmen noodle dish that coats springy noodles in a rich, spicy sesame sauce instead of broth. This easy recipe focuses on building flavor with ingredients such as sesame paste, chili oil, soy sauce, vinegar, garlic, ginger, and seasoned ground pork, creating a bold mix of nuttiness, heat, saltiness, and umami. The noodles are cooked until firm, then tossed directly with the sauce so every strand becomes glossy and fully coated. Toppings such as green onion, bok choy, crushed peanuts, sesame seeds, soft egg, or chili crisp can add crunch, freshness, and extra aroma. The final bowl is satisfying and deeply flavored, with chewy noodles, savory pork, creamy sesame richness, and a spicy finish that works well for a quick lunch or dinner.

00:00This warming sirenashi tantanmen captures the spicy, nutty flavours of tantan ramen without the soup.
00:09First, take your serving bowls and in each one, add half teaspoon of soy sauce,
00:14half teaspoon of Chinese style chicken bouillon powder, half teaspoon of toasted sesame oil,
00:21half teaspoon of chili oil, one tablespoon of unsweetened soy milk,
00:26and one tablespoon of ground sesame seeds.
00:29If you're making a lot of portions, you can multiply the ingredients,
00:33mix them in a jug, and divide them between the balls equally.
00:37Once it's mixed, set aside for later.
00:41Next, we're going to make the seasoned pork, so heat a wok over medium,
00:45and add one teaspoon of cooking oil.
00:48Once it's hot, add quarter of an onion, one to two garlic cloves,
00:54and about one teaspoon of ginger, all finely diced.
01:01Once they're fragrant, add 150 grams of ground pork,
01:06and season it with a pinch of some pepper.
01:11Fry down until it's browned all over.
01:17Then add one and half tablespoon of yellow miso paste,
01:21half tablespoon of tobanjan chili bean sauce,
01:24one tablespoon of sake,
01:26one teaspoon of sugar,
01:28and 30 grams of roughly crushed cashew nuts.
01:32I love the texture of the cashew nuts in this recipe. If you prefer, you could use peanuts here instead.
01:38You could also add some chilis or extra tobanjan if you want it extra spicy.
01:43Mix it until all of the ingredients are evenly distributed, then take off the heat.
01:50Finally, boil your ramen noodles according to the instructions on the packaging.
01:55Always do this last to ensure the noodles have the best texture when served.

02:07Once the ramen is al dente, drain the water and rinse them with fresh water to clean off the excess

02:14then place them over the tare we prepared earlier.
02:22Place a generous amount of spicy seasoned pork on the top.
02:30I like to serve it with some soft boiled eggs,
02:34and some broccoli sprouts for a proper colour.
02:39And that's it, delicious tan tan ramen without the soup.
