10:18In dormant time, like around March here on the coast

10:23You take the rootstock
10:23And you put a healthy branch on top
10:27And you make a new tree
10:28But in the summertime
10:29You do something called budding
10:33So this is a dormant bud
10:35I just slice it off
10:37And you want lots of what's green under here
10:41Which is called phloem
10:43Phloem is like the blood of the tree
10:45And that's just underneath the bark
10:46And that's that nice green color
10:48The blood of the tree
10:49Yeah, that's where all the sugars
10:51Can transport back and forth
10:53Xylem is the skeleton of the tree
