01:48Attempting to carve out a dream wine cellar.
01:59In the heart of the Languedoc region in southern France.
02:03Lies the stunning 19th century Chateau du Puy-et-Prin.
02:11With seven acres and 39 magnificent rooms.
02:16Overlooking a central courtyard.
02:18We planted this.
02:20Yeah.
02:21On Valentine's Day, two years ago.

02:24It's been home to Tim and Sasha.
02:26Who bought it in 2003.
02:29For 390,000 pounds.
02:32Can you all squeeze in much tighter.
02:36After two decades.
02:38They have handed over the running of their thriving wedding business.
02:42To daughter Lily.
02:44And son-in-law Luke.
02:46Bonjour.
02:48Making the decision to come here.
02:52Permanently.
02:53Was a massive one.
02:56But the draw of the chateau.
02:59Just pulled us in.
03:01It's given back so much.
03:04Over the years.
03:05So much happiness.
03:07It's given us a lot of pleasure.
03:09And pride now that our daughter and son-in-law are taking it over.
03:13And continuing.
03:14Because we're any custodians here.
03:17The building will be here long after we're not here.
03:22Located two hours from Toulouse.
03:26The last time we saw them, they had made a rustic love bench out of bamboo from the garden.
03:34Sometimes things work better when you're under more pressure.
03:38And a floral chandelier that scattered confetti right on cue.
03:54And with this year's wedding season around the corner, Tim and Sasha now have grand plans to reinvent a blocked
04:05window.
04:07In the courtyard is a hidden window which has a horse trough underneath it.
04:13And I've found an old door with a curved window on the top of it that matches this, the shape
04:22of this hidden window.
04:23Where we're doing this is a sort of shady corner that just is neglected.
04:30It gets overgrown and it's just nothing's happening.
04:35It's going to look really interesting and pretty.
04:42Tim's first job is to remove the base of the reclaimed door.
04:52I'm not going to throw that away.
04:54You never know when that could come useful.
04:56It's a chance for former fashion designer Sasha to get creative.
05:01I'm doing glass panels for the door.
05:06I have to paint them from behind.
05:09I do tracings of my paintings.
05:13So I've taken drawings and I've photocopied them, just printed them out black and white,
05:19so that I can have a symmetry of design over the whole thing.
05:26I'll be painting separately, joining up the swirls so they look as though they go through the hole of the
05:35window.
05:36So I'll be painting on the wood as well as the glass.
05:40I think I've bitten off more than I can chew, as usual.
05:44As usual.
05:46But it's going to be interesting.
05:58The old putty has been removed and Tim is ready to fix it all back together.

06:49The reclaimed door has been made fit for purpose,
06:53but Sasha's intricate designs for the glass are still very much a work in progress.
07:06Nestling in the picturesque countryside of southwest France lies the stunning Chateau d'Aron.
07:15Inside, the 19th-century property boasts 17 rooms, including four grands salons,
07:24while outside there is a swimming pool and several outbuildings within its four acres.
07:35It's home to globetrotters Carlton, a fund manager, and wife Alicia, who bought the property in 2023 for £690,000,
07:47and live here with their three children, Thiago, Vigo and Saskia.
07:56We've lived in, I think, we're up to nine countries together.

08:24and it's pretty spectacular, especially when the sun's shining.

08:39Located in the Nouvelle-Aquitaine region,
08:44Carlton and Alicia are due to rent the whole chateau out
08:48for their first wedding in a few weeks' time.
08:53Today, their mission is to clear a huge barn for the wedding breakfast.
08:59First wedding, it's going to be a bit of a challenge.
09:03We don't want it looking like a barn barn.

09:05We want to look at it like an...an attractive barn.
09:08A very attractive barn.
09:09So, let's see how we're going to do that, I'm not sure.
09:12As well as having to clear out the working barn,
09:16there are two huge doors to restore, fit for the newlyweds to walk through.

10:16So, you won't see from that side backwards.
10:21And Alicia has plans to make it look fit for purpose.
10:26To hide those walls and to make it prettier, I'm ordering curtains.

10:32So, Carlton will put a wire all the way around
10:35and basically it will all be curtained.
10:37It will all be ruffled.
10:39And hopefully it will make it look a little bit more festive
10:42than it looks right now.
10:44I guess I'm the typical male.
10:46I have a... I have a kind of an idea.
10:50But then, can I execute it? No.
10:52So, she brings the detail to the execution.
10:59The biggest thing about here was that we needed a place
11:02that could be a home and a business at the same time.
11:05My job is in front of a computer for the most part.
11:08When you're here, you can actually start something.
11:11At the end of the day, you can say,
11:12Oh, I've got that far.
11:14Which you don't get when you're working on the big projects.
11:17So, it's quite kind of de-stressing.
11:21And it kind of gives you that gratification.
11:30Good progress.
11:32Barn is looking much cleaner.
11:34There's still a few things to do, but we're getting there.

12:31but once the second coat's on, bride can walk through.
12:34To be wedding ready in time.
12:45In the stunning Dardogne region of southwest France
12:50sits the magnificent 14th century Domaine de la Barde.
12:55Once a luxury hotel, it has 18 charming rooms
13:01and within its ten acres sit several outbuildings
13:06and a sumptuous swimming pool.
13:11Today, it's the home of Chef Tim, his wife Chris,
13:15and their two sons, Owen and Ollie.
13:21I don't think you can ever finish a chateau
13:22because I think the scale of it, everything is bigger,
13:25so you constantly have to upgrade and update
13:29and even if you think you've nailed it and everything's done,
13:32wear and tear, you have to start again.
13:34There's really no end to that.
13:37I mean, it's a constant life of passion for the property
13:41and it's a lifetime project basically and we enjoy it.
13:46Located 100 miles east of Bordeaux,
13:50the chateau lay abandoned until Tim and Chris bought it in 2020.
13:56And they've worked hard to bring it back to life.
14:01From the stunning formal gardens to creating 12 guest suites
14:06and running food and wine workshops.
14:13Tim's past projects include designing and building a huge bespoke barbecue.
14:20If you were to try and buy this barbecue,
14:22I don't think any amount of money could get this. Priceless.
14:27Perfect for a spot of al fresco wining and dining with the family.

14:39Today, Tim has had a caulking idea.
14:44One thing every chateau needs is a wine cellar.
14:47We don't have a basement, but luckily enough,
14:49around the back of the chateau in the old corridors that were part of the service areas,
14:53we do have what was the cave for the hotel when it was a restaurant
14:58and it's ambient, it's stone, it stays really cool.
15:02So my plans are to clear the whole thing out, clean it all up,
15:05and then I want to try and build my own kind of cabinet
15:10so that you walk in and it feels like a proper piece of furniture.
15:13Even though it's currently a dumping ground,
15:16Tim can envisage good times ahead for his cookery and wine students.
15:21I want to use this as kind of a tasting room
15:24and I think I can have a nice barrel, stools around, glasses hung up.
15:28This will be a nice little part of the wine cave experience.
15:32So I'd like to give it a bit of a wow factor,
15:36judge it up a bit, a little bit of je ne sais quoi, as we say in England.
15:44So this is the wine cellar.
15:47They just kept their wine in here.
15:51Mouton Cadet, all lovely stuff, lovely stuff.
15:54So getting these wine racks out is probably my first job.
16:22The back corridors here tend to get a bit neglected and we throw everything in.
16:27But it would be wonderful to give this purpose again.
16:37From that corner all the way around, it'll be display shelving, lovely, different wines.
16:46And I will probably spend a lot of time in my tool shop and then I can run straight through
16:52to the wine cellar,
16:53pour myself a glass of wine after work, living the dream.
16:58Tim will have to dream on for now.
17:01Turning these bland back rooms into an opulent wine cellar is still a work in progress.
17:17Four hours south at Chateau du Puyet-Prin.
17:22It's so exciting doing things like this, you know?
17:25It's been three weeks since Sasha started reverse painting her grapevine design for their courtyard window.
17:34At the moment we have these grapes here, which are painted in oil paints, but I am silvering them from
17:44the back.
17:46It's wonderful and it's painting in layers.
17:50Food for the soul.
17:57Next, Tim wants to make a backing for the frame.
18:01I've had to come up with an idea.
18:03So we've got a couple of old signboards that used to sit outside our place and they are printed onto
18:12aluminium.
18:13So I've cut this to size and given it a bit of a polish, enough to just create a little
18:21bit of reflection.
18:25So with spacer bars, it's going to be sitting about that distance off the surface.
18:32It's becoming a much bigger project than we imagined.
18:35A little show of its own, which is quite fun for us to work on.
18:42Sasha's masterpiece has undergone another layer, this time with gold leaf and green glass ink.
18:49This isn't solid, you can see through it.
18:53The paint glints through behind the other layers that have gone in front.
19:01Tim gets very frustrated with me because I don't really write things down beforehand.
19:09He's completely the opposite.
19:11You know, he'll plan it all and measure it all out.
19:15I don't measure anything.
19:27I love making things and making things work, mechanical or otherwise.
19:35It just keeps me awake at night sometimes.
19:40But it's fun. I enjoy it.
19:42I do have a need to work, to create.
19:48And luckily, I've got Tim so that we can take on big projects like this and know that it's all
19:58going to come together and look beautiful.
20:02With six intricate layered panels to complete, Tim and Sasha's passion project for their courtyard still hangs in the balance.
20:18Travelling three hours westward to Carlton and Alicia's, the couple are preparing to hire out the whole chateau for their
20:27first wedding and have cleared a huge barn where the wedding breakfast will be served.
20:34Now, it's time to tackle some jobs inside the chateau.
20:39Today, we're going to work on the tower en suite.
20:42It needs a new toilet.
20:44It does.
20:44Which is going to be done by you.
20:46Yeah.
20:47And also the tiles need an update.
20:50My tiling experience has been in square or rectangular rooms.
20:55So this is a sort of a hexagonal room.
20:59So there's going to be a lot of tile cutting.
21:03Day two of the barn.
21:04We've got some painting of the barn doors.
21:07And I think that's going to keep us busy for most of the day.
21:10Yeah.
21:11That's a good amount.
21:14So we're going to turn this off now.
21:16In the tower guest bathroom, Carlton tackles his first dirty job of the day.
21:22I'm really looking forward to getting rid of this horrible plastic system.

21:30We met, I was in Vietnam.
21:33I was working for an international kindergarten.
21:39And Carlton was working in the office building.
21:43And so I had seen him a couple of times and thought he was quite cute.
21:48And then one evening, he was sitting at the bar.
21:51As I was walking past him, he turned and gazed at me and gave me this...
21:55He had a look.
21:56Deep look.
21:57It was the smolder.
22:01With those eyes and I sort of, my heart sort of skipped a beat.
22:0416 years later, I'm taking a toilet apart.

22:17With the toilet removed, Alicia can fire ahead.
22:23Professionals prefer not to tile on tiles.
22:26And I can understand why.
22:28And the reason we've done it is because these bathrooms are really cold.
22:34And so the more insulation we can get on the flooring underneath to keep the heat in, for us was
22:43the better option.
22:47It's quite tactile and it's quite therapeutic.
22:52I'm a jigsaw puzzler.
22:54And it gives me that same satisfaction of putting all the jigsaw pieces together.
23:06In the wedding barn, Carlton is moving on to his next job.

23:14Giving one of their four-metre-square barn doors a first coat of paint.
23:19And once again, he has some helpers.

23:29I've been named the tile queen because Carlton doesn't particularly like tiling.

23:46Saskia is now making her own fun, leaving Dad Carlton to finish the barn door.
23:54It's not going to win prizes.
23:58But once the second coat's on, it's going to look a darn sight more presentable.

28:38Tim is designing bespoke cabinets for his new wine cellar.

28:46You know, they're old buildings.
28:48They're remarkable.
28:49It looks like to be this level and square for something 700 years old.
28:55But it needs to be something.
29:09With the batons fixed in place, he can start adding a little extra flavour.
29:17All the posts will have stop chanfers on.
29:20And it just adds a bit of detail.
29:23You know, it won't be, it won't be massively in your face.
29:26But it will, it will just make it look like a master craftsman has done it.
29:35This cabinet might be for housing fine wines, but Tim's not missing the chance to recycle wood from around the
29:44chateau.
29:46These are just garden fence posts, shutter boards, random bits of timber, just sort of infill, things like that.
29:54And then I'll paint it all one colour.
29:57It will be very uniform and you'd never know, hopefully.

30:22Now I can start basically just carcassing it out and making it into lots of nice chambers.
30:43It will trim up quite nicely, I think.

31:36but there's still a long way to go before it will fully pass the taste test.

34:47and the corner pieces.

34:55Because when you've taught yourself,
34:57you feel even more accomplished
34:58than when somebody's shown you the ropes.

35:05in and amongst the rest of the stuff.

40:54but it will create a glow
40:56that will come through the glass that Sasha's painted.

41:16and letting it become part of the wood.
