00:02On today's adventure, we travel to Stewart, Florida, home to one of the
00:08most productive inshore and offshore fisheries in the state. I meet up with my
00:13friend Matt. We're ready, let's go do this. And with his help, we chase the bike.
00:19Running from the storms, we land mahi-mahi. Fast, colorful, and absolutely delicious
00:25on the grill. Look at that, we're capping the Giants today. Let's go. We try our luck
00:31with Permit. For the first time ever, we are going for Permit on the 43 Invincible.
00:36Smart, wary, and some of the toughest fish you'll ever fight. Along the way, we laugh,
00:43try new techniques, and make memories that only come with time on the
00:48water. Tight lines, wild runs, and unforgettable moments. This is what
00:55Uncharted Waters is all about.
01:20Uncharted Waters with Peter Miller is presented by Invincible.
01:26Every new season of Uncharted Waters with Peter Miller, we raise the bar. We go bigger. So
01:33let's get fueled up with a protein fix. Gotta get my proteins on. Load the bait well
01:38with live bait. Get some gogs, get some pilchards, got some crabs for the Permit if we see some.
01:45I got a dozen gogs so far. One has a funky eye. They look nice though. And pack the cooler
01:49with ice. Because once we leave the dock, the adventure begins. Going by Pier 66 in Fort Lauderdale,
01:59and we're about to take a 100-mile run up to Stewart to go visit my good buddy Matt George.
02:03He's
02:04onemorebite72 on Instagram. And we are going to go after Snook. We're going to try for some
02:09Permit. We just picked up some live bait. We've got goggle eyes. We've got pilchards. We're going to get
02:13thread fin in the morning. I'm glad you're here for the adventure. As you can see, my new 43-foot
02:21Invincible is a thing of beauty. Powered by Quad V10 400s and stabilized with a Seakeeper Gyro.
02:28She's smooth, she's fast, and she's absolutely beautiful. All right, well we made it. 100 miles
02:36over to St. Lucie Inlet. It's about 730. It's beautiful out. It's calm. So now our goal is to get
02:42to
02:43the Airbnb, tie up for the night, get a shower, get some food. Matt and his wife Rebecca welcomed
02:50me with open arms. Matt and I are both from Florida, but the only time we fished together
02:55was down in Guatemala, where we crushed the Pacific sailfish and became great friends. Good job. 28
03:02sails today. Good job, guys. Nice job, everybody. Yeah, but we're ready. We're ready with your knowledge
03:09and those little Krabby Patties. It's always hard to sleep the night before a big fishing trip. The
03:14excitement builds, the anticipation kicks in, and all you can think about is getting out on the water.
03:24So, looks like we're going to have a great day today.
03:28Are we ready? We're ready. Let's go do this. Let's untie this girl and get going.
03:36We're going to not use chum because it gets the boat dirty, right? It gets the boat dirty.
03:40That's a beautiful rig. 43 foot of pure freaking dynamite. I'm not sure we have enough space for
03:45today, but we'll try to make it work. I'm going to do my joystick out. With Mercury's joystick piloting,
03:55I can control all four engines with just one hand. I can slide the boat sideways,
04:00spin it in place, or ease right up to the dock with total precision. It makes running this 43 foot
04:06invincible effortless. What do you think of this little place? I like it. Great place to fish. It's
04:13pretty unique. Offshore, we have all your black fins, mahis, sailfish. Inshore, you can get your tarpon,
04:20big snook, permit. I mean, you could go out and catch a mahi and a tuna, be back in by
04:2511 and catch
04:26your snook and tarpon and go home. That's amazing. Okay, we're going to meet the bait guy. See this
04:33little flat boat? Yeah, yeah, yeah. That's our guy. What's happening, guys? There's a reason
04:37professional fishermen buy bait instead of just catching it themselves. Time on the water is
04:42valuable. Buying bait means you can head straight to the fishing grounds and stay focused on the target
04:47species. All right, thank you. I will. But I do both because you can never have enough.
05:00There's a lot of times when the thread bins will be right in on the beach when it's flat,
05:05but on days like today where we have this bigger swell, they're usually out deeper. What do you
05:10normally do? You get right in the middle of it? That's a squadron. Try that. See what we got.
05:14Here you go, sir. Thank you, sir. Got them. I'll probably tangle by now. Yeah, I'm loaded up.
05:21There they are. What are they? I feel like they're right, Flav. Oh, there he is. Hello, buddy. A
05:28little backstop for you. We like to call him Thready Mercury. Oh, look at that. I got the fatties.
05:36One in one. No, you don't want the hornbellies. I know we don't. The thread bins will be right on
05:40the
05:40top. Let's see what I can muster up. I got a hornito and a good one.
05:46Living the dream catching this many baits. It's like we're tournament fishing right now. But you
05:51can't just pass it up. You always have to get a couple freshies. Do a twist. Slide it right up.
05:57Twist. These are a little bigger than the rest. All right, Matt, what do you think? We got enough
06:00bait? Oh, we got plenty of bait. Both wells filled. Look at our little TV screen, our screensaver. We have
06:06thread fins and we have crabs. We've got everything. We're ready. We're loaded down and ready to go.
06:17Uncharted Waters with Peter Miller is presented by Invincible Boats. When you're serious. Mercury.
06:28Starbright. Clean and protect.
06:33Yeti. Built for the wild.
06:40Today, we're fishing with Matt in his home waters off Stewart, Florida. Are the fish typically going
06:46from north to south here as well? Yes. Okay. What kind of current you'd normally have up here?
06:50The last few days we've had about two knots of current. Not a lot.
06:56And there's no better vantage point than from the tower of the 43 Invincible.
07:05From up top, you can spot bait showers, birds working, and fish pushing through the spread.
07:11It's the ultimate advantage.
07:15All right, so any good fisherman, they get a rod, and they put out a bait while they're screwing around,
07:20and they wind up catching one, don't they? You have to.
07:27That's good. You can see right here, we're in 99 feet, and these fish are up in about 80 feet,
07:3375 feet. Looks like a couple of decent fish. There we go. I'll prospect it. Come on, baby.
07:41Let us know if he's taking line. That clicker's off. Okay. You dropping? Yep. Come on,
07:45baby. I think it's a mahi. There he is. Hey! That's not a bad mahi. Good job, Matt. Well,
07:54you know, I've been wanting to bring some mahi home. Well, now you can. Finally. Do you have
07:59your gaff? Oh, yeah, I do. There you go. Look at that. That's a pretty one. Look at the giants
08:05today. Let's go. Nice colors, huh? That's a beautiful fish. Good way to start the day. Where
08:10you want them? Let's put them in there. That's my bait well, just for now, for the bleeding, you know?
08:13There
08:13you go. That's a good one. It is. Perfect. Got the stick off the boat, bro. Yeah, let's do it.
08:19Nice. Oh, we're getting a bite here. Another mahi? I think so. Let me get you in gear. Oh,
08:26we got this one, too. Another mahi. All right. Takes a second to get tight on these fish, huh? Yeah.
08:33Look at them. Twins. Yeah. Little cookie cutter. Little twins. That's cool. Look at that. Yeah. Oh,
08:38look at that. Brought the whole school up. Oh, yeah. We got a lot of fish. We got a rod
08:41with the shrimp on it.
08:42One of the cool things about mahi-mahi is that when you hook one, the whole school
08:46comes up with it. And the hooked mahi triggers a feeding frenzy. Yeah, we got a big school of
08:51mahi around us now. Whole school here. Oh, look at him. Just came in and ate the bait.
08:59Actually, we'll probably keep this one. I'll swing him to you right here. Come on in.
09:04Two points. Thank you. Come again. Thank you for playing. When mahi are too small,
09:10they go back. Fishermen let the undersized ones go so they can grow, spawn, and keep the fishery healthy.
09:17Mahi grow incredibly fast, sometimes up to five pounds a month. In one year, they can reach 40 to 60
09:24pounds.
09:27Big turtle. Got a turtle out the back here. Oh, you got a turtle? Yeah, see him? Oh, yeah. Wow,
09:33it's a nice big head on that turtle. Yeah. This one's either tangled or something. Could be a fish
09:39out there. Yeah, it feels like something could be chewing on it. We got a lot of remoras up here,
09:42too. Do you? Yeah. It was a pretty hardy bait that you put on there.
09:49Yeah, something. Probably just a little mahi or something. Well, there's no drag pulling and there's
09:55no dancing going on. No, it's remora. Remora. I like remoras and I like to cook them, but the only
10:01problem is they stick to the pan. Ah. He's taking a leak. He really is. Here, let's see what it
10:06tastes
10:06like. Yeah, that's definitely urine. That's a remora. It has a familiar wang to it. I think it'll stick
10:14on the side of the boat here. He's on there. Poor guy. He's like, I can't hang on anymore.
10:21Citizen. Better starts now. Sea keeper. Fight to fish and not the roll. Power pole. Total boat control.
10:36Gator step. Premium flooring and decking. Kite fishing has been around for centuries,
10:43first used in the Pacific Islands to carry baits offshore. But here in South Florida,
10:47it has become legendary for catching sailfish and many other pelagics. The beauty of the kite is
10:53simple. It keeps your bait splashing and digging right on the surface. Yeah, on these really light
10:58wind days, you've got to have a helium tank. And I just came out with this new Uncharted Waters party
11:02tank. It fills the helium balloons up and you attach them to the kite and you can fly them all
11:06day long.
11:07That looks good, right? Yeah, that looks great. Okay. And then we tie it to one of the spars here.
11:12Snug that down. With that Uncharted Waters helium,
11:15you're off to the races. Nice thing about these Dominion rods is you can hold it in your hand.
11:23You can move around. No cords needed. Don't trip on any cords. And there's my first clip.
11:28Now, attach live bait to the three clips and you've got three rods ready. One short, one mid,
11:34and one long. All spread perfectly on the main kite line. Getting bit. Come on, baby. I'm tight.
11:47It feels very steady. What do you got, Pete? He's coming at us. I'll tell you that. Yeah, I'm here.
11:52I don't know which way he's going to go. I hope he goes round about.
11:58Feels like a Bonita. We just hooked into a Bonita. Some call it a trash fish. And Bonita fish are
12:03big.
12:04Oh, well, they are trophy fish, aren't they? They are trophy fish. But pound for pound, they fight hard and
12:10can
12:10save the day. They make incredible bait for deep dropping, sword fishing, and while trolling for
12:16marlin and tuna. See how docile they get when you hold them upside down? I'm going to let this guy
12:21go.
12:23Oh, yeah. I'm getting bit on the lawn, guys. Bonita swim in schools. And I mean the whole class shows
12:30up at
12:31once. I'm tight. Hook one and you'll feel it. Oh, yeah, it's working. Built like little torpedoes with red
12:41muscle fibers that give them incredible endurance. Call that a bow slider. All right, we got to let
12:48this guy go. Okay, we're going to slide him off. All right, on to the next one. It's a Bonita,
12:57unfortunately. Catching Bonita can be a blast, but it can also drive you a little crazy. Man,
13:03we're being challenged. Some days it'd be like that. Every hookup means another screaming run.
13:08There we go. Wonderful Bonita. Another tangle and another line to cut and retie. Ah, painful.
13:17Yeah, baby. The Bonita boys are back. Mal, we're really trying to dig them out today. Good job. I'm
13:23proud of you. Thank you, man. See you later. Gemlux. Demand the best. For your official Uncharted
13:36Waters merch, go to unchartedwaterstv.com. Dominion Erod. Life unplugged. Uncharted Waters Helium by Airship.
13:54That right there is extremo. That's something you don't mess with.
13:58Yet we're messing with it. Well, we're watching it from a safe distance.
14:05Out here, storms are no joke. The wind can turn in an instant. Seas can build up and lightning on
14:12the
14:12horizon is a fisherman's worst nightmare. We might have to use celestial navigation to get away from
14:20that thing in a moment. We're determined to catch a fish until it becomes unsafe,
14:25which could be about three minutes.
14:36For the first time ever, because of Matt George here in Stewart, we are going for permit on the 43
14:41Invincible. We've got some live crabs. We've got 30-pound fluoro. You can use a circle hook or a
14:47hook. The idea is to get in there stealthily. Maybe put one motor on instead of four. We are tied
14:53up.
14:54Give the old drag a test. That's too light. They'll get you to the bottom. That's good.
15:02Parameter strong fish. I'm going to get us in there.
15:05All right, now got to get those crabbies that I bought down in Miami. They are Cuban. The key is
15:11to go
15:11through the carapace on the corner here. So you want to work the hook in there and you wiggle it
15:15until
15:16the point comes through. And then you cut these points off. And now they are ready. These are candy
15:20for permit. So if they're here, we should be able to get a bite. You like it here, Matt? Yeah.
15:25I mean, you always want a lively crab. And when they do that, you know you're in good shape.
15:28The nice thing is I've had them in the live well for a few days. And I had a couple
15:32of baits in there
15:34that died. And they've been eating them for the past two days. So they're really frisky.
15:39Straight out. They're going to have two snacks right in their face. What does it look like on
15:43the finder? There's a lot going on on it right now. Yeah.
15:48And you want to let it look as natural as possible by letting the crab just like float. When they
15:54bite,
15:54you better lock it up and get after it because they will bite it. They'll crush the shell. And
16:00the hook will just come right out of their mouth. You got to get them on the first bump. Otherwise,
16:04they're just spitting the shells out. You're not getting them. They pull a lot of drag. They have
16:08a tendency to attract sharks. And you know, you got to really kind of work them hard to get them
16:14to the boat.
16:16I got to call you right back.
16:21That's got to be a perm, huh? Yeah. Oh, yeah, baby. Get them, Matt. What can I do for you?
16:29Nothing. Just get the door ready. All right. All right, Matt. We've been working for this one
16:34for a few minutes, huh? Yeah.
16:41Watch out. Watch that anchor. All right. Oh, there he is, Pete. Bring them down.
16:52A little guy, but we'll take them. Don't get in here too fast. How's the shark population?
16:59You'll be all right.
17:11Let's go, baby. Yeah. Nice. Woo. Good job, man. Finally. That was pretty quick, man.
17:20Nice fish, dude. Beautiful fish, huh? You want to hold your trophy?
17:23Look at that. So cool. I love these lips, dude. Yeah, these rubber lips.
17:27Old rubber lips. That was a good fight. That was a great fight on that rod.
17:32Permit are one of the most prized game fish in Florida waters. With their silver bodies
17:37and black-tipped sickle fins, they're built for speed and power. But what really sets them apart
17:43is how smart and cautious they are. One wrong move and they're gone. That's why landing a permit
17:49is considered one of the most exciting moments in sport fishing. Lots of life in that fish.
17:54Everybody, round of applause for Matt George. He says, let's catch some permit,
17:58and we catch some permit. That was awesome. Oh, we do have crabs, though. That's a good one here.
18:04Feeling good, like I should. It's amazing how blessed you feel when your time is well spent.
18:12Out here, every moment on the water is a gift. And every screaming reel is a memory in the making.
18:19You're too good at this, man. That's going to be bigger than mine. Okay, everybody. Hey,
18:23he hooked this one. So it's really his fish, but I'm reeling it in. Just for TV. Made for TV.
18:29There's a childlike joy that comes when a friend hands you the rod for the next permit. It's more
18:34than just fishing. It's the blessing of having friends who understand and share the moment with you.
18:39Just keep with them. You ever back down on a permit before? I don't know,
18:43but you might want to slow up. All right. Going around. Coming around. Hit him up. He's up. Keep
18:55him up. There he is. A little bigger than the first one. Let's go. You got your permit flags?
19:05We could make one on a paper towel and draw one. No, you just need a paper plate. I get
19:09it.
19:13They have a lot of fight in them. Yeah, man. A lot of fight. And you don't want to like
19:17horse it.
19:18You know, like you want them in, but you don't want to go ballistic. Sometimes you have to.
19:23Yeah. You just don't want to get them the shark. Yeah. Don't say that. I'm in the engines. Go, go,
19:29go, go.
19:32Okay. I got long arms, huh? Yeah. Oh yeah. This is coming back. Permtown. Here it is. Permtown.
19:39Oh, that's a nice one. A little bigger. 15 pound or 18 pound. Whoa. Surfaces like Shamu.
19:48All right. Do you need help? Nope. Let's go, baby. Look at my plate. Congratulations.
19:56Look at that, dude. Look at that sickle fin. Yeah. Beautiful fish, huh? Matt,
20:00you really put me on them, man. You say we're going to catch permit up here?
20:04This was a nice change. Yeah, man. This one's heavy.
20:06And to do it in a 43-foot boat? Oh, man. That's pretty crazy.
20:11Through sport fishing, I've learned gratitude. Proof that there's magic in being at the right place,
20:17at the right time, and with the right people.
20:22As we release the permit back into its waters, unharmed and free, we're reminded that the true
20:29reward is not in keeping the catch, but in the joy, the fight, and the memories it leaves with us.
