00:00What if I told you the key to this magic vinaigrette was just a triangle?
00:02And you too can have magic vinaigrette.
00:04The must-have three key components, and that is part of the salt-fat-acid triangle.
00:07Key component, salt, a pinch of salt.
00:09Next we need a fat, I love extra virgin olive oil.
00:11Then we need an acid.
00:12Champagne vinegar translates super well to fresh springy salads.
00:15So here we are, but we're not stopping there because this is magic vinaigrette after all.
00:18My secret is I like to do my salt-fat-acid triangle, and then a little something sweet,
00:22and a little something punchy.
00:23I'll often add a little bit of Dijon, and a little bit of honey,
00:25and I think that just rounds it out perfectly.
00:28If I can open the honey jar,
00:29shallot, and this is totally optional.
00:32And now we shake.
00:33You might as well dance it out while you shake.
00:36Okay, look at this gorgeous emulsified dressing.
00:38And emulsified is just a fancy word for it was successfully mixed together.
00:41Last most important stuff, taste.
00:43Yum.
00:43If it's too salty, add a little bit more fat.
00:45If it's too fatty, add a little bit more acid.
00:47And if it's too acidic, add a little bit more salt.
