00:03it's out one Sunday we were just coming over the little bridge and I just looked at the first
00:11sales sign straight away I just said I'm going to my grandchildren tomorrow I want to make it
00:18into a five-star hotel and I want to put Yorkshire on the map we wanted to create something that

00:34unique it's like a posh guest house are you well yeah everybody's your friend in Yorkshire how are you
00:49no one would expect a hotel like this in a valley in the middle of Yorkshire
00:57we see ourselves with the gotchisters with the reeds the gleneagles we want to even be higher
01:03than them hello welcome to Berkeley Hall we are a Yorkshire team we've got that Yorkshire grit
01:12about us it's number one it really is the experience the people it's fabulous
01:21the feeling
01:42it's a colourful autumn at Grantley Hall and with the hotel's 47 rooms nearly at capacity it promises to
01:49be a busy week for general manager Nunu and his 500 staff the hotel is where dreams are made staying
01:58in one of our gorgeous superior speeds the hotel is where experience are shared the hotel is that
02:06memories are created so every action is always thinking how can we surpass guests expectations
02:13that they come to us and they say is much better than any hotel in the world my job is
02:17to pass that to
02:18the team you could just get the guys to check the cars the six cars they're not straight at all

02:33I was always going to be an otelier always I couldn't do anything else and it's not a job
02:37it's you know it's my DNA and I could actually work all the time
02:43you know I'm sure that the team have spotted and they are doing something about it but I will chase

03:47Nuno's last job of the morning is a check of one of the hotel's most sought-after bedrooms
03:54the royal suite that I'm going to check

04:07built in the halls former chapel the royal suite offers views of the formal gardens
04:18and features a show-stopping mezzanine level bedroom
04:24it's very frequent that people enter to this room and they cry when they get in because they
04:29can't believe how beautiful it is this could be a room for a king or a queen love it love

04:39yeah and here we have a picture of Valeria our founder and reminds me a bit even if she's not
04:46around she's around she's watching us love that picture
05:03Valeria's son Richard has been at the helm of the business since the Sykes family bought Granley Hall
05:08in 2015 and this week he greenlit a huge revamp of one of the food and drink venues the orchard
05:17bar
05:17and restaurant so we've got the orchard 24 7 place it's meant to be more of a cafe style place
05:24but more
05:24relaxed we changed the concept of a couple of times a year to really give our guests a different
05:29experience it's originally post-covid outside dining when you couldn't dine inside but it's
05:37become a really big part of what guests want here the orchards transformations are designed to change
05:42with the seasons and are masterminded by the hotel's interior and ambience manager Marek
05:50Patrick action but the bottom line is it has to be better it has to be different it has to
05:56photograph well and it has to be part of the Grantley DNA which is you know the very height of
06:01luxury
06:02as you can see summer is over pink white is disappearing and we're gonna bring more warm
06:09colors gold black and red this sophisticated colors just came to me like take me take me take me work
06:16with me and yeah so I'm very excited actually about this project this year Marek has just three days
06:25to bring his vision to life before a lavish champagne launch on Friday evening no pressure no pressure yeah
06:34it's just here but outside it's like this
06:41but his ambitious plans mean adding a new entrance updated lighting we're gonna have a six yeah three
06:50different designs in the middle yeah and pots galore of metallic paint it has to be the same goal as
06:57we
06:57have across the hotel so we manage after like forty four yeah five samples and that's just for starters
07:04Marek is my butterfly I love Marek when I came here he was the right man for the job which
07:12he's in charge
07:13of style how it feels the smells the looks and that's what he's great at so the panels we're gonna
07:20cover with the antique middle kind of tiles but there's a few rules with Marek I don't want orchard
07:27closed for any time by closing an outlet it jeopardizes the service and jeopardizes the revenue and the
07:33reputation if I had my own way would it be they needed the day so I'd be quite nice to
07:37him to give
07:38him three days actually today Grantley Hall is one of Yorkshire's most opulent hotels but back in
07:582015 the grade two listed country house was going to rack and ruin when Barnsley born entrepreneur
08:05Valeria Sykes spotted it on the market I'm sure God were working through me that perfect day and I just
08:13turned and I said I'm going to buy Grandfield tomorrow I'm doing it for Yorkshire and I've
08:18got to do it I said it's going to be a top hotel I want to show the south what
08:23we can do in the north
08:27the first person Valeria called upon to help realize her vision was son Richard I remember
08:34really well when mum called me I knew the place it's a magical place really really is and I said
08:41well
08:41it must be crazy but I'll support you in what you want to do to embark on something like that
08:47is a
08:47massive challenge but if this is what you really want we'll make it happen

09:28I'm good at attention to detail easy to different level but you can't be running this place at the
09:34level we are without being demanding in everything Valeria very different she's the mother figure she's
09:40incredible lady which is the backbone of what we do she's the one that makes sure that we have the
09:45family
09:45values I came from near Bounsley I brought up in a council house my dad was a minor I've had
09:55a
09:55fantastic life but I've had a lot of sadness as well I got divorced so that's why I could put
10:02all the
10:02money into this I left school at 16 went to work for my dad's motor vehicle companies scrapyards typical
10:08tight Yorkshire man I'd certainly not got any idea of this sort of level of opulence or luxury
10:16Richard enlisted the support of his three children and together the Sykes family embarked on the
10:22challenge of a lifetime once we started looking around the grounds it was really sad to see how
10:29it had been allowed to fall into so much disrepair oh it was terrible weren't it you know suspended
10:34the ceilings that were just letting water in so the magnitude even of the main hole was significant
10:40but yeah proper challenge and that proper challenge didn't half grow legs the renovations took four
10:51years employing an army of local Yorkshire contractors and at a cost of more than a hundred million pounds
11:01much of which was spent on adding a whole new wing we need accommodation we needed a spa we
11:08needed a plant room the challenge was to create something with a bit of almost Romanesque feel to
11:13feel a little bit more European we did that on purpose to have something different to the hall so
11:19it's got tradition but the DNA is quite different the fabric is fresher and newer we wanted to create
11:28something that felt unique more like a touch of Yorkshire it's like a posh guesthouse lady Johnson
11:35how are you where else can you get greeted at the door saying hey up love how are you welcome
11:40to
11:41granted all let's get you all checked in let's get your bags up to the room and get you all
11:45nice and
11:45relaxed all right Glenn we're gonna give you that Yorkshire welcome why would we not you smell nice
11:51wonder what you've got is it they use words that are very Yorkshire words and I love it you know
11:55if
11:56you have somebody welcomed by a member of staff and they go I hope I hope love everybody's your
12:00friend in Yorkshire it's been great thank you very much see you later and you leave as a friend you
12:06don't just leave as a customer coming up the hotel receives a booking from a global superstar
12:15we have a super VIP coming coming from the state she'll be staying with us for a week so watch
12:20the
12:20space and can Marek stay afloat there's a well underneath there is yeah machine well with a rising tide of
12:30problems in the orchard look at this mess it looks like a bomb site
12:47at the heart of Grantley Hall's mission to be a world-leading hotel is the bespoke level of
12:52service it offers to everyone who stays with them with that in mind they've created a special task
12:58force called the guest experience team good evening how are you very well thank you darling
13:04how are you you'll have a toast which department head Thierry guides with joie de vivre
13:11fabulous thank you so basically the whole of guest experience is to oversee our guest journey from
13:24pre-checking to check out she had a good weekend it was just brilliant see you next time we do
13:34research about our guest we log what they like what they don't like they will remember the emotion and
13:41the little detail more than the bottle of champagne you put in the bedrooms they still find plenty of
13:45tennis no I can't run I'm I'm really in pain his legs so I need to get free to have

13:53for me it's all about the heart of hospitality the big influence my life was my dad because
14:00he was merging casinos and then he switched to batteries it was just amazing if I could be
14:0510% of as good as he was then I'd be happy it was incredible the hotel has 10 staff
14:16assigned to each
14:16room and with guests typically paying between one thousand and four and a half thousand pounds a
14:21night no request is too big or too small good afternoon guest experience we'll check about three
14:31or four rooms a day add any amenities the flowers champagne cakes etc and just make sure everything's
14:38all good for our guests we have been known to go out in our Bentley to collect prawn cocktail crisps
14:44for
14:44our guests we have a pillow menu and all our bed linen is made with the finest Egyptian cotton that
14:51one just needs you need to move that ribbon and then the one behind it just needs to go at
14:56the other
14:56side but yeah perfect with a hotel nearing capacity the pressure is going platinum for Thierry's team
15:05with a booking from a globally renowned singer we have a super VIP coming coming from the state so
15:13I'm just reading what the main requirements are the riders she'll be staying with us for a week so watch
15:18the
15:26space the PA looking after Thierry's high-profile guest has been in touch to say their car is only a
15:32couple
15:32of hours away we're not going to do the normal check-in we will hand them to the PA thank

15:47sous chef Shannon I'm making our very special VIP photo frame for a very special ready guest and we
15:59put a chocolate photo frame on a chocolate cake filled with ganache blonde chocolate fudge a salt
16:05caramel truffles crunchy chocolate pearls gold leaf so we want to use the finest ingredients the best in
16:13the world everything that we use down to cream sugar chocolate is world-class it's edible gold it
16:20doesn't taste of anything but it just gives that little bit of granny gold and finally a personal
16:27touch for a truly independent woman we have a white chocolate care hopefully the VIP guests will love it
16:41back in the orchard bistro work is continuing on the three-day transformation
16:49who owns this ladder this is to go to retirement house please oh that's mine oh sorry baby but I
16:56really don't like this ladder it's like 1999 but the forecast for style guru Marek's schedule is
17:04looking bleak the weather is not helping because we are working on the floor outside now so the water is
17:10going to be slightly wet yeah helping keep things on track is Marek's trusted assistant so this is
17:18Shelley Leslie gift shop manager and my amazing helper having Shelley in house is unbelievable help and
17:26she's always willing to change her shifts she's working me very close and the connection from day
17:31one is like we are Pisces basically we are both Pisces we get each other we get each other
17:37Marit's basically like a Labrador puppy he will always go the extra mile for his role he is extra in
17:46every way but he's very very kind-hearted and he will try his best to to do what he can
17:51to help anybody
17:53I grow up from the very young person when my mom was always telling me you have to do what
17:59is here
18:00and just keep up with positivity and amazing beautiful approach needs to be perfect if it's
18:07not perfect I'm gonna leave it I'm gonna leave it until it's gonna be done properly just a little
18:14bit stop exactly it is perfecto next job for mr. perfection an eye-catching selfie station I do
18:24like this fat boom boom sticking out well let's hold the fabric over it and let's see how it looks

18:31across the room something's put a real dampener on progress what's happening here feel cap it back

19:58just over two days to go into launch night really every section of the marquee is in transition
20:06it looks like a bomb site for me it's all about the wow it's all about the first impression the

20:14that we don't have wows it's not gonna happen because then we're going downhill we have to keep going up
20:18here with everything we do the hotel staff have been briefed and are ready for the arrival of the famous
20:30pop
20:30star when celebrities are staying they'll be using a pseudonym so the staff will will have to use a
20:37pseudonym not not not the real name of course the hotel's code name is miss H though the cake bears

20:43real first initial hello salon hi how are you is it ready for miss H it's absolutely ready fabulous thank
20:49you what we got here and so we've got a dacha put sponge munch up with ganache and then we
20:53have the
20:54gold leaf will leave yes how special this is fabulous isn't it miss H is booked into the studly suite

21:04Thierry's final tasks is to deliver the cake and help Marek check the room for the slightest imperfection oh

33:46with just nine hours to go before an elite list of guests to send for the launch party

34:05we're doing the holly trees now

34:18we're always checking the weather very carefully
34:20because obviously the structure of the venue is
34:23fragile and we need to make sure you know it's safe
34:26the wait is not going to help with the glamorous look of the guests arriving today
34:31but hey-ho we're going to deal with
34:34adding fifteen evergreens to the four huge olive trees is boosting the woodland feel

38:33when the guests arrive for the launch party this evening
38:36they'll be treading in some very illustrious footsteps
38:39since it was built in the late 17th century
38:42Grantley Hall has been home to lords and ladies
38:44and played host to royalty
38:48doorman and history buff Kevin
38:49is guardian of the hall's archives
38:55we're very fortunate that when Grantley Hall first opened as a hotel
38:59there were several people in the area said
39:03oh i've got some historical bits you might like
39:06and as more information comes in
39:09this gets thicker and thicker and thicker
39:12i think the appeal of the mysteries the little bits of
39:16we've got a snippet of that
39:18is i want to know that that is correct
39:21and how can i find that out?
39:23it's a challenge
39:24get the old grey cells working
39:26Grantley Hall first built in 1680
39:29was in the same family for 200 years
39:32one of the sort of flamboyant characters of that time
39:36was certainly the first Lord Grantley
39:37which was Fletcher Norton
39:39very much in the judiciary system
39:41and became speaker of the house
39:44by the early 20th century
39:46the Norton family had sold the hall
39:48to the wealthy industrialist
39:49Sir Christopher Furness
39:50and his wife Lady Jane
39:54a lot of the decor now
39:56is very much down to the 1910s 1920s
40:00they had lavish parties
40:02they had friends stay
40:04they showed off
40:05the Japanese garden was added by Lady Jane Furness in 1910
40:09one of the first in the country
40:11and she loved to show that off
40:15and there she is proudly sat on the bridge
40:20after the war the hall became an adult education centre
40:23before the Sykes family added a new chapter to its illustrious history
40:30looking through these photographs
40:31it just invokes all the different things that Grantley Hall has been
40:35how it's evolved, how it's grown
40:37and obviously Mrs Sykes bought this place
40:41changed it
40:42put the vibe back into it
40:44put the beauty back into it
40:46brought it back to life
40:51at last the revamped bistro is ready for launch
40:58and for the first guests
41:00there will be a much needed port in a storm

41:10but everyone's here to party
41:13it's a tough shift for the porters
41:19but it's nothing they haven't dealt with before
41:28because it is a theme
41:30you can allow a bit of poetic license
41:32and Marek's brilliant at that
41:33he delivers and he's got a proper heart of gold
41:35he gets the stress, does the work
41:37he gets the accolade
41:39that's really lovely to be able to put somebody in that position
41:42luckily it seems the weather hasn't kept anyone away
41:47and the party guests can now get their first glimpse of the new look space
41:55every way you turn there is a beautiful vignette
41:58that you can just enjoy and take in
42:01so I think they've just hit the nail on the head really

42:24I feel completely fulfilled and accomplished
42:28it's like triple the salary
42:30I feel very privileged that I can do this for the guests
42:34and to receive such a beautiful feedback from them
