00:02On today's adventure, we travel to Stewart, Florida, home to one of the
00:08most productive inshore and offshore fisheries in the state. I meet up with
00:13my friend Matt. We're ready, let's go do this. And with his help, we chase the bike.
00:19Running from the storms, we land Mahi Mahi. Fast, colorful, and absolutely
00:25delicious on the grill. Look at that. We're capping the Giants today. Let's go. We
00:30try our luck with Permit. For the first time ever, we are going for Permit on the
00:3443 Invincible. Smart, wary, and some of the toughest fish you'll ever fight. Along
00:41the way, we laugh, try new techniques, and make memories that only come with
00:48time on the water. Tight lines, wild runs, and unforgettable moments. This is what

01:32bigger. So let's get fueled up with a protein fix. Gotta get my proteins on. Load
01:37the bait well with live bait. Get some gogs, get some pilchards, got some crabs for the
01:43permit if we see some. I got a dozen gogs so far. One has a funky eye. They look nice
01:48so. And pack the cooler with ice. Because once we leave the dock, the adventure begins.
01:56Going by Pier 66 in Fort Lauderdale, and we're about to take a hundred mile run up to Stewart
02:01to go visit my good buddy Matt George. He's at OneMoreBite72 on Instagram. And we are going
02:07to go after Snook. We're going to try for some Permit. We just picked up some live bait. We've
02:11got goggle eyes. We've got pilchards. We're going to get threadfin in the morning. I'm glad you're
02:15here for the adventure. As you can see, my new 43 foot Invincible is a thing of beauty. Powered
02:24by Quad V10 400s and stabilized with a Seakeeper Gyro. She's smooth, she's fast, and she's absolutely
02:32beautiful. All right. Well, we made it. A hundred miles over to St. Lucie Inlet. It's about 730.
02:39It's beautiful out. It's calm. So now our goal is to get to the Airbnb, tie up for the night,
02:47get a shower, get
02:48some food. Matt and his wife, Rebecca, welcomed me with open arms. Matt and I are both from Florida, but
02:54the
02:54only time we fished together was down in Guatemala, where we crushed the Pacific sailfish and became great
02:59friends. Good job. 28 sails today. Good job, boys. Nice job, everybody. Yeah, but we're ready. We're
03:08ready with your knowledge and those little Krabby Patties. It's always hard to sleep the night before
03:13a big fishing trip. The excitement builds, the anticipation kicks in, and all you can think about
03:19is getting out on the water. So, looks like we're going to have a great day today. Are we ready?
03:29We're ready. Let's go do this. Let's untie this girl and get going.
03:36We're going to not use chum because it gets the boat dirty, right? It gets the boat dirty.
03:40That's a beautiful rig. 43 foot of pure freaking dynamite. I'm not sure we have enough space for
03:45today, but we'll try to make it work. I'm going to do my joystick out.
03:53With Mercury's joystick piloting, I can control all four engines with just one hand. I can slide
03:59the boat sideways, spin it in place, or ease right up to the dock with total precision. It makes running
04:05this 43 foot invincible effortless. What do you think of this little place? I like it. Great place to fish.
04:13It's pretty unique. Offshore, we have all your black fins, mahis, sailfish. Inshore, you can get your
04:19tarpon, big snook, permit. I mean, you could go out and catch a mahi and a tuna, be back in
04:25by 11 and
04:26catch your snook and tarpon and go home. That's amazing. So, Pete, we're going to meet the bait guy.
04:32See this little flat boat? Yeah, yeah, yeah. That's our guy. What's happening, guys?
04:36There's a reason professional fishermen buy bait instead of just catching it themselves. Time on the
04:41water is valuable. Buying bait means you can head straight to the fishing grounds and stay focused
04:47on the target species. All right, thank you. I will. But I do both because you can never have enough.
05:00There's a lot of times when the bread bins will be right in on the beach when it's flat. But
05:06on
05:06days like today where we have this bigger swell, they're usually out deeper. What do you normally
05:10do? You get right in the middle of it? That's a squadron. Try that. See what we got. There you

05:15sir. Thank you, sir. Got them. I'll probably tangle by now. Yeah, I'm loaded up. There they are. What are
05:23they? I feel like the right flav. Oh, there he is. Hello, buddy. A little backstop for you. We like

05:30call him Thready Mercury. Oh, look at that. I got the fatties. One and one. No, you don't want the
05:37horn bells. I know we don't. The thread fins will be right on the top. Let's see what I can
05:41muster up. I got
05:42a hornito and a good one. It's living the dream catching this many baits. It's like we're tournament
05:49fishing right now. But you can't just pass it up. You always have to get a couple freshies. Do a
05:54twist.
05:56Slide it right up. Twist. These are a little bigger than the rest. All right, Matt, what do you think?
06:00We got enough bait? Oh, we got plenty of bait. Both wells filled. Look at our little TV screen. Our
06:05screensaver. We have thread fins and we have crabs. We've got everything. We're ready. We're loaded down and

06:40Today, we're fishing with Matt in his home waters off Stewart, Florida. Are the fish typically going
06:46from north to south here as well? Yes. Okay, what kind of current you'd normally have up here? Um,
06:50the last few days we've had about two knots of current. Uh-huh. Not a lot.
06:56And there's no better vantage point than from the tower of the 43 Invincible.
07:05From up top, you can spot bait showers, birds working, and fish pushing through the spread.
07:11It's the ultimate advantage.
07:15All right, so any good fisherman, they get a rod, and they put out a bait while they're screwing
07:20around, and they wind up catching one, don't they? You have to.
07:27That's good. You can see right here, we're in 99 feet, and these fish are up in about 80 feet,
07:3375 feet. Looks like a couple of decent fish. There we go. I'll prospect it. Come on, baby.
07:41Let us know if he's taking line. That clicker's off. Okay. You dropping?
07:44Yep. Come on, baby. I think it's a mahi.
07:49There he is. Hey! That's not a bad mahi. Good job, Matt. Well, you know,
07:55I've been wanting to bring some mahi home. Well, now you can.
07:58Finally. You have your gaff? Oh, yeah, I do. There you go. Look at that. That's a pretty one.
08:04What's gaffing the giants today? Let's go. Nice colors, huh? That's a beautiful fish. Good way to
08:09start the day. Where you want them? Let's put them in there. That's my bait well, just for now,
08:12for the bleeding, you know? There you go. That's a good one. It is. Perfect.
08:17Got the stink off the boat, bro. Yeah, let's do it. Nice. Oh, we're getting a bite here.
08:22Another mahi? I think so. Let me get you in gear. Oh, we got this one, too. Another mahi. All

08:30Takes a second to get tight on these fish, huh? Yeah. Look at them. Twins. Yeah. Little cookie
08:35cutters. Little twins. That's cool. Look at that. Yeah. Oh, look at that. Brought the whole school up.
08:40Oh, yeah. We got a lot of fish. We got a rod with the shrimp on it. One of the
08:42cool things about mahi
08:43mahi is that when you hook one, the whole school comes up with it. And the hooked mahi triggers a
08:49feeding frenzy.
08:50Yeah, we got a big school of mahi around us now. Whole school here.
08:56Oh, look at him. Just came in and ate the bait. Actually, we'll probably keep this one. I'll swing
09:00him to you right here. Come on in. Two points. Thank you. Come again. Thank you for playing.
09:09When mahi are too small, they go back. Fishermen let the undersized ones go,
09:13so they can grow, spawn, and keep the fishery healthy. Mahi grow incredibly fast. Sometimes,
09:20they can grow up to five pounds a month. In one year, they can reach 40 to 60 pounds.
09:28Big turtle. Got a turtle out the back here. Oh, you got a turtle? Yeah, see him? Oh, yeah. Wow,
09:33it's a nice big head on that turtle. Yeah. This one's either tangled or something. Could be a fish
09:38out there. Yeah, it feels like something could be chewing on it. We got a lot of remorse up here,
09:42too. Do you? Yeah. It was a pretty hardy bait that you put on there.
09:49Yeah, it's something. Probably just a little mahi or something.
09:53Well, there's no drag pulling and there's no dancing going on. No, it's a remora. Remora.
09:58I like remoras and I like to cook them, but the only problem is they stick to the pan.
10:02Ah. He's taking a leak. He really is. Here, see what it tastes like. Yeah, that's definitely urine.
10:09That's a remora. It has a familiar wang to it. I think I'll stick on the side of the boat
10:14here.
10:15He's on there. Poor guy. He's like, I can't hang on anymore.
10:22Citizen. Better starts now.
10:25Sea keeper. Fight to fish and not the roll. Power pole. Total boat control.
10:36Gator step. Premium flooring and decking.
10:40Kite fishing has been around for centuries. First used in the Pacific Islands to carry baits offshore.
10:46But here in South Florida, it has become legendary for catching sailfish and many other pelagics.
10:52The beauty of the kite is simple. It keeps your bait splashing and digging right on the surface.
10:57Yeah, on these really light wind days, you gotta have a helium tank. And I just came out with this
11:01new Uncharted Waters party tank. It fills the helium balloons up and you attach them to the kite.
11:05And you can fly them all day long. That looks good, right? Yeah, that looks great.
11:09Okay, and then we tie it to one of the spars here. Snug that down. With that Uncharted Waters helium,
11:15you're off to the races.
11:19Nice thing about these Dominion rods is you can hold it in your hand. You can move around. No cords
11:25needed. No trip on any cords. And there's my first clip. Now, attach live bait to the three clips,
11:31and you've got three rods ready. One short, one mid, and one long. All spread perfectly on the main
11:37kite line. Getting bit. Come on, baby. I'm tight.
11:47It feels very steady. What do you got, Pete? He's coming at us. I'll tell you that.
11:52Yeah, I'm here. I don't know which way he's going to go. I hope he goes around about.
11:58Feels like a Bonita. We just hooked into a Bonita. Some call it a trash fish.
12:02And Bonita fish are big. Oh, well, they are trophy fish, aren't they? They are trophy fish.
12:08But pound for pound, they fight hard and can save the day. They make incredible bait for deep dropping,
12:14sword fishing, and while trolling for marlin and tuna. See how docile they get when you hold them
12:19upside down? I'm going to let this guy go. Oh, yeah. I'm getting bit on the lawn, guys.
12:27Bonita swim in schools, and I mean the whole class shows up at once. I'm tight.
12:34Hook one, and you'll feel it. Oh, man, working. Built like little torpedoes with red muscle fibers
12:42that give them incredible endurance. Call that a bow slider. All right,
12:47we got to let this guy go. Okay, we're going to slide him off.
12:54All right, on to the next one. It's a Bonita, unfortunately. Catching Bonita can be a blast,
12:59but it can also drive you a little crazy. Man, we are being challenged. Some days it'd be like that.
13:05Every hookup means another screaming run. There we go. Wonderful Bonita. Another tangle and another
13:12line to cut and retie. Ah, painful. Yeah, baby. The Bonita boys are back. Matt, we're really trying to dig
13:21them out today.

14:05Out here, storms are no joke. The wind can turn in an instant, seas can build up,
14:11and lightning on the horizon is a fisherman's worst nightmare.
14:15We might have to use celestial navigation to get away from that thing in a moment.
14:21We're determined to catch a fish until it becomes unsafe, which could be about three minutes.
14:36For the first time ever, because I'm at George here in Stewart, we are going for a permit on the
14:4143 Invincible.
14:42We've got some live crabs. We've got 30-pound fluoro. You can use a circle hook or a j-hook.
14:47The idea is to get in there stealthily, maybe put one motor on instead of four.
14:52We are tied up. Give the old drag a test.
14:56That's too light. They'll get you to the bottom.
15:01That's good.
15:02Parameter strong fish. I'm going to get us in there.
15:05All right, now got to get those crabbies that I bought down in Miami.
15:09They are Cuban. The key is to go through the carapace on the corner here.
15:13So you want to work the hook in there, and you wiggle it until the point comes through,
15:17and then you cut these points off, and now they are ready.
15:19These are candy for permit, so if they're here, we should be able to get a bite.
15:23You like it here, Matt?
15:24Yeah.
15:25You always want a lively crab, and when they do that, you know you're in good shape.
15:28Nice thing is I've had them in the live well for a few days, and I had a couple of
15:33baits in there
15:34that died, and they've been eating them for the past two days, so they're really frisky.
15:39Straight out.
15:40They're going to have two snacks right in their face.
15:42What does it look like on the finder?
15:43Like, there's a lot going on on it right now.
15:46Yeah.
15:48And you want to let it look as natural as possible by letting the crab just, like, float, you know?
15:53When they bite, you better lock it up and get after it because they will bite it.
15:58They'll crush the shell, and the hook will just come right out of their mouth.
16:02You got to get them on the first bump, otherwise they're just spitting the shells out.
16:06You're not getting them.
16:06They pull a lot of drag.
16:07They have a tendency to attract sharks, and, you know, you've got to really kind of work
16:12them hard to get them to the boat.

17:32Permit are one of the most prized game fish in Florida waters.
17:36With their silver bodies and black-tipped sickle fins,
17:39they're built for speed and power.
17:41But what really sets them apart is how smart and cautious they are.
17:45One wrong move, and they're gone.
17:47That's why landing a permit is considered one of the most exciting moments in sport fishing.
