28:24And you had to follow quickly
28:27Because if you didn't, you know, step up and match what he wanted

28:32And that scared the crap out of me
28:35And I was Marco's right-hand man
28:38I went to hell and back every day of my life for him

28:45But the level of skill I was learning was at a rate of knots

29:26And it was the wrong machine

34:27Lucky Cat is an Asian-inspired Japanese influence
34:31And that's where I want to experiment with that hybrid
34:35And develop something magical
34:39And Michael is an incredible, young, talented, hungry chef

34:50He's still in the transition from head chef to executive chef
34:55And I think it will be one of the biggest moves in his entire career

37:02Multiple generations drinking less
37:03The whole sector is struggling
37:10I've closed multiple restaurants over my career
37:13And I've learnt that competition is rife
37:17I think 65% of new restaurants close in the first 18 months of trading
37:22So, you have to be better than good
37:29The first time I had to close a restaurant, would you believe, was where I was born
37:33In Glasgow, years ago
37:37It was fully booked for six months in advance
37:39Friday, Saturday
37:41But, Monday to Thursday
37:42It was a freaking ghost town
37:45No one could justify spending 120 quid
37:49You know, for dinner on a Monday night in Glasgow
37:51And so, I left Glasgow with my tail between my legs
37:55It was painful

38:02That was a big wake-up call
38:05But, everything I've failed in
38:08Everything I've closed
