00:34I wonder how many people realise that something like 1.9 million tonnes,
00:40nearly 2 million tonnes of food is wasted every year
00:44in this sort of professional cooking industry, I guess.
00:48But what's happening now to stop this dreadful waste, Rachel,
00:51is that we've got, coming, AI, artificial intelligence bins.
00:57I think it's so clever.
00:58They've got cameras and sensors.
01:00And as food has been chucked into the bins,
01:03it interrogates the food on its way into the bin
01:06to decide what it is and all the rest of it.
01:08And that information is then fed back to the kitchen
01:12so that they can buy more sensibly.
01:16Cut back on the potatoes because we're throwing away 25% of the potatoes
01:20that we buy and so forth.

01:24There's not too much food wasted in our house.
01:27In fact, the truth of the matter is, Rachel, if I'm absolutely candid,
01:30when I go to that big fridge and open it, there's almost nothing there.
01:38Honestly, there's sometimes a little bit of cheese that's turning to wax.

14:59And that's what I love about Springwatch is nature writes the stories.
15:03And he was missing one spine because there's three spined sticklebacks.

15:08So that's why he was called Spineless Psy.
15:10And next to him was Frisky Phil who had all his spines.
15:13And he was the resplendent one getting all the women.
15:15And then his nest got trashed by something.
15:17And then Spineless Psy got the females and they came in and they laid all the eggs.
15:22And then it's the male that fans the nest and tries to get the eggs to hatch.
15:26And on the last show, on the last sort of ten minutes of the last show of the series,
15:31they hatched.
15:32And it was just one of those stories that everybody got behind.
15:35And I think it even got the front page of one of the newspapers about Spineless Psy the stickleback.
15:41I just love those stories when we champion the underdogs that most people don't even take a second glance at.
15:48And yet they're so interesting if you get to know the biology.
15:51Everybody's looking for the big fierce ones or the lovable ones or whatever.

26:13surroundings about half a century later Edward VI gave bride well he donated it to the city of London
26:19he gave it as a poor house for destitute children but it became a prison and a prison particularly for
26:26women who were found to be of loose morals so women who were thought to have kind of strayed
26:32off the proper path if you like and the model proved so successful that similar institutions up
26:38and down the land were called bride wells after this prison and the country took on that name for many
26:43of them not necessarily police stations and I hadn't heard of the police link at all but certainly there
26:49are still in fact prisons up and down the land that were once called bride wells which is quite
26:53interesting um also clink shares a similar history because the original clink was a prison in Southwark
26:59in London and that operated well into the 18th century it was one of the oldest oldest prisons in fact
27:05um in the country but once again that name kind of slips into the imagination as a byword for any
27:10prison
27:11particularly a dismal one um a small dismal prison um that was sort of local to a town so there
