02:28The Pitons are St. Lucia's most prized landmarks, and part of what gives the property its value.
02:34To stay for a full week at La Belle Hélène, you're averaging around 300,000 US per week.
02:40To command that £220,000 price tag, it has recently undergone a £4 million renovation, adding a host of new
02:49facilities.
02:49From a pickleball court, basketball court, soccer field, it also has St. Lucia's deepest pool, as well as a floating
02:58jetty.
02:58So you can arrive not only by ground, but also by private catamaran as well.

03:41before the property reopens for bookings.

15:40On recently acquired adjoining land stands Bow House,
15:45a decaying building with links to St. Lucia's social history.

16:06The property was originally built by the late Lord Glen Connor,
16:10a British peer, landowner and socialite,
16:13who was close friends with Princess Margaret
16:15and came from a family of industrialists and merchant traders.
16:20Yeah, so this is Lord Glen Connor's old estate.
16:22So where we're standing here is literally where his elephant Bupa used to roam.
16:26Yes, Bow House was also home to his pet elephant, Bupa.
16:30I think that was our first question, right?

16:33Sadly, the answer was no.
16:35That really added to the sort of charm and legacy of the whole building
16:38and the whole estate, really.
16:39Guys, if you look there as well, it's got the old logo of Lord Glen Connor as well.

16:47But Bow House wasn't just a place for Bupa to roam.
16:50Aside from being a bedroom for his elephant,
16:52he would use this as a sort of place to party.
16:54So he'd have Princess Margaret, all sorts of celebrities, royalty,
16:57out here every Wednesday and just have crazy island parties.
17:00So we should try on one of that as well and bring something back every Wednesday.

17:09Today, Bow House is in disrepair and the building must be stabilised.
17:13The family plan to spend three and a half million pounds on renovating the site
17:18as a restaurant and wellness retreat with 12 additional villas.
17:23Well, we were originally going to knock this down and just make it kind of modern.
17:26But then Ben and I were set on keeping it and just redoing it and renovating it.
17:31So it's obviously the floor plan.
17:33And then you've got some AI images we've created.
17:36Wow.
17:38I think this one's my favourite, you know?

17:41The night time is amazing.

17:46It's about adding that kind of modern luxury to it
17:48while keeping the traditional kind of Taj Mahal style.
17:51Yeah, which is effectively what we think we've done with Le Bel Helene.
17:54We've kept that tradition and modernised it and we want to do the same here.
17:59So obviously you've got the beach bar vibe, which is going to be down there.
18:02The pool will be in front of the property.
18:04And then obviously up here will be the restaurant and the bar.
18:08The idea will be to connect the two properties together with an access road down the waterfront.
18:12And really the idea will be to give guests from the super yachts access to Between the Phaetons.
18:19With these ambitious plans in place, the estate would eventually cover nine acres of prime land.
18:30Back at La Belle Helene, the visiting group celebrates with a traditional St. Lucian party, complete with steel band and
18:38fire dancers.
18:49For the owners, it marks the beginning of the next chapter in the villa's story.

34:46And just an amazing spot, really.
34:50And what I like about this space is it branches off into the bar, cinema room, cosy, snug.
34:55But this is definitely where most evenings will be spent.

38:02Right now, it's really woody, so it's just the seeds and you've got that lovely peppercorn flavour.
38:07But when it's younger, you can dig up the roots and eat them like parsnips.

38:16I love seeing people's expressions when they pop something into their mouth for the first time

38:51It is quite small at this time of the year, but you still get a load of flavour though that

39:01We've got brilliant seaweeds here because we've got a really nice rocky shore.
39:05So, tonnes of amazing flavours, not all just salty, there's a real variety of flavours going on.
39:11This is called Polysiphonia lanosa and this tastes amazing.

42:19Outside, the pool has been built as a natural swimming pond, in keeping with the setting.
42:27Through the plants, we take away the nutrients of the water, so it doesn't become green.
42:33It's a challenge to keep it clean, because it has no chemical at all.
42:37I've never seen anyone do it quite as well as this, Chiara.
42:40And it just flows so beautifully from this stepping stone into the long pool,
42:44which with the sun setting beautifully at the end there, the light's just magical.
42:50As night falls, lighting positioned around the grounds makes it clear where Villa Glow got its name.
42:56Everywhere we turn, there's another light popping on and another beautiful space that's coming in view.

44:19Which is where, earlier today, Cam sourced the ingredients he'll be using for this evening's homegrown Cornish meal.
44:26These are the Alexander seeds.
44:28We're going to crush them up just to bring out some more of that flavour.
44:30And we're then going to infuse them into some butter.
44:35And they are very peppery, sort of aniseed-y sort of flavour.
44:40I think it's really nice to sort of bring in flavours that they've never had before
44:43and really use the dynamics of the produce that surrounds the property they're staying in.
44:49So I'm basically going to shut the scallops, these are fresh off the boat.
44:53It's a very unique experience.
44:55We kind of work with the guests before they arrive
44:57and then we'll basically turn that into a meal in their properties overlooking the ocean
45:00where the food's been found or caught.
45:07The fresh Cornish scallops are cooked in the Alexander-infused butter, giving them a peppery taste
45:14before being topped off with fresh blackberries
45:18and a few sprigs of freshly picked seaweed.

45:23For guests here, the draw is the emphasis on local sourcing
45:27and the expertise of the chef preparing it.
