Watch how to debone, tie and stuff a leg of lamb for a DIY roast dinner.

00:02We're going to show you how to butterfly bone a leg of lamb.
00:06For this you need a really sharp knife.
00:08A boning knife is handy because it's got a thinner blade.
00:12Guide your knife very carefully along the leg bone,
00:17feeling your way as you go.
00:28Keeping your knife close to the bone, just cut away.
00:53Trim off any sinewy bits and then open up the edges.
00:57What you really are looking for is an even thickness of meat.
01:04You can see we're trimming along the sides and then putting in the stuffing.
01:10It's a bit messy but just stuff it all in and roll it.
01:23Now you'll need some butcher string and just make evenly spaced knots all the way along.
01:34Probably leave a couple of centimetres in between each tie.
01:43Work your way along.
01:44Trim off any bits of string that are hanging over.
01:52And you're ready to roast.
