00:20I cannot tell you how excited I am to be here and interview Rujuta.
00:37You know, we live in a world where we're trying to top everything.
00:42Everything has to be more artisanal and more curated and more exciting.
00:48And then one day you just collapse because you realize that you cannot reach some higher realm with all this.
00:56And here we have somebody who just takes us in a very matter-of-fact way, in a very unpretentious way, back to the basics.
01:04So we are so grateful because, honestly, you don't have to be, you know, from any kind of like, there's no class hierarchy.
01:12It's just sensible, commonsensical, eating, living, exercising.
01:19And above all, you know, the way you've conjoined health and happiness is something just really lovely.
01:26And it goes back into sort of the way, you know, wisdom, the wisdom of our, well, ancestors and shastras talk about the holistic life.
01:37So thank you for doing this.
01:41I think you've really done a service to our society in transition and made us feel like we want to own some of the old nuggets of wisdom that are available to us.
01:52The new book, Mithihar, can you start by talking about that?
01:57Mithihar means balance, which is what we all seek in our life.
02:01You sort of like brought that into the context of food and beyond food.
02:06So let's start with Mithihar.
02:08You know, when you were saying that there is no class hierarchy with food, you know, it's, it is true because health is meant for everyone.
02:18And health, of course, and good food, of course, has to be accessible and affordable because only then wo khanay mein mazata hai.
02:27Because I think we belong to a culture where we don't just consume, but we also share.
02:32Because we also want to share someone else's food when our turn comes to eat or, you know, when we are hungry or we are thirsty.
02:39And then we also want to share not just food, but also our stories.
02:45And we want someone who will eat with us, who will also eat our food, who will feed us, who's also willing to be fed, not do any naatak.
02:53Kya mene karb chhoddiya, mene sugar chhoddiya and, you know, those kind of things.
02:58And who will also share our grief and our happiness.
03:02So mitahar essentially means eating without feeling guilty, eating with a sense of gratitude and eating in a manner that is in sync with our personalities, our climate, our language, our cuisine and our communities.
03:22And really about embracing differences and having that courage that just because I'm embracing a diverse kind of a diet.
03:31Because, you know, we eat local, seasonal, traditional, I think every five or seven kilometers we make a different kind of dal, we make a different kind of rice.
03:40We call it different things based on where we come from, whether it's bhaat or chawal or rice or whatever.
03:47So it's also this courage that just because I embrace diversity, I'm not going to lose out on my identity.
03:56And I think that is what mitahar really stands for.
03:59It's an all embracing concept and I think we should embrace it wholeheartedly.
04:04As we should in other things in our life in this country.
04:07I think if we embrace it with food, we automatically embrace it with everything else in our life.
04:12Because we are, I mean, we become the food that we are eating.
04:18Anna se hi, shareer of course banta hai, you know, in Sanskrit it is called the annamaya kosha.
04:23But man bhi usi se banta hai.
04:25To agar bar bar man mar raha hai, to I think you need to look at what you're eating.
04:30And eat food which is fresh and lively.
04:33In fact, do you believe that we are what we eat?
04:35I think we are a lot more than what we eat and we are, you know, we are not just the food that is on our plate.
04:46But we are also the attitude with which we eat.
04:50And we are also the wisdom with which we share.
04:54And the wisdom with which we welcome an extra guest at the last minute.
04:59Because we not just believe in anna hai purna brahma, but we also believe that atiti devo bhava, which is the last minute, when we share it with that, I think that's when our life really grows and our waste really becomes slim.
05:14When we become people who are just hoarding, consuming and saving things for ourselves, we become much larger than what we would like to be on our waste and much smaller than what we should be in our brain.
05:30Lovely.
05:31Oh, thank you.
05:32You know, in our family, we used to have a different version of Atiti Devo Baha, which is FHB, which is that when an unexpected guest shows up, it was family hold back.
05:44So, can you tell us a little bit, both from a scientific and a pragmatic lens, about why we should eat local?
05:56See, we are living in an era of climate change.
05:59You know, that is one of the biggest arguments for eating local food.
06:04The whole joy and the whole point of being alive is to make human connections.
06:08To make human connections in an optimum manner, we need humans to be healthy.
06:15And healthy humans are not just about how much they weigh and what is their size, but also about how in sync they are willing to live with their climate.
06:26Whether or not they have the wisdom to eat within their ecological means and not just economic means.
06:33Otherwise, coolness translates into having an avo toast every morning or a kinawa bowl or a, you know, probiotic yogurt or, you know, one of those things, you know, rucola salad, asparagus, skewers and stuff like that.
06:50But when you eat food, which has a name in your local language, your mother tongue in the region that you live in, that's when you really get to understand people.
07:02And that's when a part of you also becomes a part of their lives.
07:07It enriches them when you embrace their food and it enriches you when you're eating this local food.
07:12I think someone very famously said, tell me what you eat and I'll tell you who you are.
07:18So is there also a scientific reason where our microbiome health gets connected with what is grown locally?
07:27And can you talk a little bit about that?
07:28See, when we are eating local food, we are essentially eating food which is climate resilient.
07:34Like in this region, you will get Bajra Bhakri.
07:37You know, it's climate resilient.
07:39It doesn't need too much rainfall.
07:41It is drought resilient.
07:43In this season, you will get Haldi ki sabzi in Rajasthan.
07:47The rest of the world is only talking, is doing Haldi shots, Haldi pills, Haldi chocolates.
07:52You know, Rajasthan is doing Haldi sabzi.
07:55And Rajasthan also has this tradition of, you know, one plate, four people around that chokdi and sharing it.
08:02And I think that is essentially why Rajasthani people are also the smartest people.
08:08It comes from knowing that every resource should be valued and every resource should be shared because at the end of the day,
08:20it comes from human relationships and nothing like forging good relationships than eating together.
08:27So, I think eating local means that it is suitable for the soil in which you are growing.
08:35So, you don't need to use pesticides and fertilizers.
08:38You can grow it naturally and that helps keep the soil health, that helps keep the soil microbes.
08:47And then all of that becomes a part of your, you know, gut microbiota too.
08:52So, we are not just and we also inherit gut microbiota, you know.
08:57So, we also inherit gut microbiota from our ancestors and constantly additions by the food that we are eating.
09:05And because our microbes know gut microbiota and haldi sabzi and, you know, churme ka laddu, every time we eat it, they feel happy.
09:15But because we spend so much time on social media, we begin to feel guilty and then there is a fight between the mind and the stomach.
09:22Yeh kitna khana hai aur kahan rokna hai.
09:24But yes, eating local is, you know, is really future proof.
09:29That is what we will need to eat.
09:31Otherwise, we are only and, you know, I'm, it always pains me to say this.
09:37We are eating dousre poor nations ka khana thinking that we are very rich.
09:44You know, kinawa hai, south american ke garib logo ka khana hai.
09:49Dark chocolate bhi afrika se a raha hai.
09:52It is, you know, udar bhi jo garib bachche hai, woh usse pick up karte hai.
09:56Par hum poor nation hi hai, hum abhi bhi developing hi hai.
09:59Par humara khana rish hai.
10:00So, if we are able to eat according to our diverse culture, I think that's our biggest flex.
10:08So, instead of eating, like, so, in my book, I also write this one formula.
10:12I call it the triple bee formula.
10:15If what you're eating is also available in Boston, Bangkok, Bangalore, and it is known by the same name every single place in all of these bees,
10:26then you better not eat it.
10:31I think this is a function of marketing, clearly, and we've all become consumers rather than basic livers.
10:39So, I love, I was very touched by something you wrote in the introduction to this new book, where you quote a cardiologist who says,
10:50it doesn't matter whether it's your 40th or your 400th surgery, for that person, it's his only heart, and he is the only husband or father of his wife or child.
11:05So, this idea that you brought into the kitchen, that every time you make dal, it should have that same quality of attentiveness is a very profound thing that you've said.
11:19You know, and that every day in the kitchen, there should be a sense that you are making the best dal.
11:27Yeah, you know, the best dal, and probably for the best people who will receive it with love.
11:34You know, paying attention and cooking, I mean, cooking, according to me, is the highest form of wisdom.
11:42If you ask me, if you have a good girl, I mean, as a dating quality, what do you want to see, so the one who makes the best dal shawal to make the best dal shawal,
11:52you should have to do the right swipe, and the rest of them have to do the left swipe, you know?
11:57Yeah.
11:58You don't need a guy with abs, you need a guy with who can cook a bowl of dal shawal, because that is the monotony that actually uplifts your life.
12:08You know, my grandfather made Amti Bhat, which is basically a Marathi version of dal shawal,
12:18every single day of his life, because he knew that he had married a working woman,
12:23and the biggest value add that he can do to her life is to make this one meal every single day.
12:30That way, if she didn't want to make pori, or chapati, or bhakri, or whatever, no one in the family, including her, had to compromise,
12:38because the Amti Bhat was always ready.
12:41And I think that is the biggest form of romance, you know, reliability, that you can depend on me for dal shawal,
12:49without a nudge, without a reminder, without you posting on social media,
12:55my husband cooked this today, I'm so lucky, I want to live in his pocket, or whatever else, you know?
13:00Aajkal ki ladkiwa faltu cheezo ke liye ladiko ko uchhalati hai, you know?
13:05So, you need to know that this is the bare minimum, agar har ros khata hai, to usko pakane ana hi chahiyeh, you know?
13:13So, raise your standards, really, as men also, and as women.
13:19So, one of the reasons why we do not, why the status of cooking is not as elevated in our heads as it should be,
13:32is because of gender.
13:33It, you need very high amount of intelligence, creativity, to cook, and mostly, it is a woman's job,
13:44because a woman can pay that kind of attention, a woman has that kind of intelligence, a woman has that kind of compassion,
13:53ki agar ghar mein chaar log hai, to sabke hesaab se kaisa ek khana ham log bana le, you know?
13:59They can do that kind of resource management.
14:02But because we have rated women poorly, because we are still living in patriarchy even in 2026,
14:08because we have rated women poorly, we think that cooking is like one faltu job,
14:16but it is the highest form of intelligence, creativity, and sophistication.
14:23So, it is because, no, thank you.
14:29So, I think it's more gender, that we don't think that paying attention means anything at all, you know?
14:36It requires your, it consumes your entire bandwidth.
14:40And we deserve people on the table, who will appreciate the food every single day,
14:49and when there is namak kam, ya thoda kaccha, or whatever, help themselves and correct it,
14:56not point that out, because otherwise we are raising families,
14:59joo criticism ke liye mooh kholte hai, or appreciation ke liye bant karte hai.
15:03Ulta hoona chahiye.
15:04But I have to add, that there is also an enormous amount of competitiveness with women within a family,
15:12especially mother-in-law and daughter-in-law.
15:14So, there is, there is, food has...
15:16That's what I'm saying, na, because hum log ka standard he poor he,
15:18we are serving the boy everyone, but we should get the boy to serve us, you know?
15:24So, the boy should compete, ke mein aisa khana banao ke donoh khush rahe.
15:28Either hum log donoh chagada kare ke ek chan kaisa khush rahe ga,
15:31not our prop business, you know, to keep anyone happy.
15:37You know, actually, this idea of attentiveness has reminded me of,
15:42I wrote a book on Vilayat Khan, and he was a great cook,
15:47and he would constantly compare his riyaz to cooking,
15:51and he said that even, and he would say that, you know, you have to,
15:55even when you choose to put the namak in the khana,
16:00will change the taste of the khana,
16:02and that is the level of subtlety you have to bring into your music,
16:06whenever he used to teach it.
16:07Ah, yeah.
16:07It's beautiful.
16:09Yes, and you see, it is going to need a classical artist to appreciate cooking,
16:14because it is like riyaz, you know,
16:16every single day you have to be able to pay that kind of attention,
16:19you need to bring in that kind of surrender,
16:22and you need to offer it with that kind of a large heart.
16:28Toh badun, dagar jo dagar gharane ke hai,
16:31he very famously said, ke khana aur gana,
16:35dono besharmu ka kaam hai.
16:37You know, you have to really lose all of your inhibitions to sing,
16:41and also to eat, and even to cook.
16:44But every single step matters,
16:47because, you know, in fact, within the Maharashtrian system,
16:53so we even have, I think, everywhere, in every part of India,
16:57there is a system of how you will serve the thali.
17:00So what comes first on the thali?
17:03Like in Rajasthan, if you have made the thali or made the thali,
17:07I think they put the sweet or the mihthai first, right?
17:10The mihthai comes first.
17:12In other parts of India, mihthai comes in the end, you know,
17:16which is why Rajasthan is where it is.
17:18So, humare yaha pe regular khane mein kab namak dalte hai thali ke upar,
17:24because we always keep a little extra namak in the thali,
17:27because Maharashtrians are very practical.
17:29Tumko nahi suut ara hai, tum kam saada namak karke rakho.
17:32You know, don't crib abound.
17:33As the kit kit.
17:34No cut cut.
17:35And during Shraddh, the timing of the namak changes.
17:40Yeah.
17:40So, when you put the namak on a regular day while you're alive is,
17:45you know, one kind of a sequence.
17:47And after you're dead, it's another kind of a sequence.
17:50So, just like the namak,
17:52we all have heard of this too.
17:55That the adhyatma,
17:56it should be like the namak in our life.
18:01It should be a little bit so that the swad comes from life.
18:04Otherwise, it has a lot of adhyatma.
18:06Adhyatma, adhyatma kar diya to swad chala chata hai.
18:08If it's not, then it can also be chala chata hai.
18:10I think when it comes to our fitness,
18:13food choices,
18:15health,
18:15body weight,
18:16also it has to be the same thing.
18:18That fitness bhi namak ke ara hai ho na chahiye.
18:21You know,
18:21that if it's a thing,
18:23then it will be fun.
18:23If you're obsessive about it,
18:25then it feels like a sacrifice.
18:29So, yes, it's important
18:31what time it comes to life.
18:33And even to learn that,
18:35you need to spend time in the kitchen.
18:38You know.
18:40So, moving on,
18:41a little beyond food,
18:43I recently saw a very intriguing Instagram video of yours
18:48where you talked about this whole absurdity
18:51of obsessing on longevity
18:53and trying to look young and stay young
18:56when it goes against nature, essentially.
19:00And I think that it's so interesting and counterintuitive
19:03because really we are heading in that direction
19:05where we're trying to control nature
19:07and control our bodies
19:08to a level where it becomes
19:09psychotic.
19:11Yeah.
19:11So, if you can talk about that
19:13because I think it's important
19:14for everyone to know
19:15that we have to align with nature
19:17and celebrate it, right?
19:20Yes.
19:20And also for all of us to know
19:22that getting old is a huge privilege.
19:25You know,
19:25I think right now
19:26when both of us came on stage
19:27and we are both wearing our glasses,
19:29I thought,
19:29what a cute moment.
19:30But we are still on stage.
19:38So, and we are still having a good time
19:41as I hope everyone is, you know.
19:44So, recently I read one article.
19:47It said, you know,
19:48it's not about longevity.
19:49It's not about lifespan,
19:51but it's also about healthspan.
19:52And now as research
19:54and longevity evolves,
19:56you know,
19:56they are also talking about
19:57the joy span.
19:59That how the whole,
20:01you know,
20:01you are only going to have
20:02a good time in your life
20:04if you are aging
20:06with vitality
20:09and with beauty
20:11and with,
20:12and by beauty
20:12it means this only,
20:13you know,
20:14seeing beauty
20:14even as your body changes
20:16with relevance
20:17and with humor.
20:20Because if all of this
20:21is going on,
20:22you are going to bore
20:24to people with your long life
20:26and everyone is going to be waiting
20:28that when will it die finally?
20:30No,
20:31this happens.
20:32We all know
20:32people wait.
20:33There are some people
20:34we are waiting for them
20:35that when will it die?
20:36And they are not going on time.
20:39So I think
20:39the whole idea
20:41of longevity
20:42is really about
20:43rich boys
20:44overstaying their time
20:46at the club.
20:47Unko sabko jana chahi hai
20:48when their time comes.
20:50And as India
20:51is,
20:52you know,
20:52as we are a developing country,
20:54as citizens
20:55with education
20:56who come to lit fests
20:58and stuff,
20:59we should all be
21:01rooting
21:02for policies
21:03that bring
21:05accessible health
21:06to every single person.
21:08Aaj bhi hamaare yahaan
21:09pollution ka problem hai.
21:11Aaj bhi hamaare yahaan
21:12kharaab pani peene se
21:14logo ki moth ho jati hai.
21:16Aaj bhi hamaare yahaan par,
21:18you know,
21:20kaafi sare aise issues hai,
21:22gender ke issues hai.
21:23We still have
21:23bruhan hatya.
21:24So we still have
21:26many issues
21:27which are,
21:28which really require
21:29our attention.
21:31Longevity doesn't
21:32require our attention.
21:33in 1947
21:34when we got
21:35independence
21:36from the Brits,
21:37women ka

21:39expectancy
21:40was 42,
21:41men ka

21:44expectancy
21:45of women

21:56But it's
21:57very important
21:58that we
21:58look our age
21:59because it's
22:00a beautiful
22:00thing to look
22:01our age
22:02and it's
22:03very important
22:04that while
22:05we are alive,
22:06we are spending
22:07time saying
22:08that
22:09mujhe jitne
22:10privileges mile hai
22:11buddha honne ke
22:12chasma penne ke
22:13zarurat padne
22:14par
22:15railing pakadne ke
22:16woh sabko
22:17milne chahi.
22:18You know,
22:18tabhi jeene ka
22:19bhi maza
22:20aata hai.
22:21People go
22:22abroad,
22:22they have
22:22a good

22:25that healthcare
22:26is more,
22:27the reach
22:28is better,

22:29accessible,

22:30why lives
22:31are better.
22:31So that
22:32is one
22:32of the
22:32things that
22:33we need
22:33to be
22:33rooting for.
22:34Not
22:34long life,
22:36but good
22:37quality of
22:38life for
22:38every single
22:39person.
22:40And the
22:40Indian
22:41thought on
22:42longevity
22:42is that
22:44everyone's
22:45dada dadi
22:45nana nani
22:46has said
22:46ke mujhe
22:47tap tak hi
22:47jeena hai
22:48jab tak mein
22:48apne do
22:49pero par
22:49khadi ho
22:51ke sab kuch
22:52apna khud
22:53mein kar
22:54paun.
22:54And once
22:55they are
22:56unable to
22:56do that,
22:57you know,
22:58they don't
22:59want to be
22:59around.
23:00So long
23:01before there
23:02is research
23:02on health
23:03span and
23:03joy span,
23:04we have
23:05the wisdom
23:06of not
23:07overstaying
23:08beyond
23:08our
23:09time.
23:11And
23:11honestly,
23:12I'm telling
23:12you,
23:13as an
23:14old woman,
23:15that,
23:16you know,
23:17no one
23:17finds,
23:18looks
23:19attractive
23:19beyond the
23:20point.
23:21At the end
23:21of the day,
23:22you're looking
23:23for someone
23:23who's going
23:24to be there
23:25in your
23:26bad time.
23:27And you're
23:27looking for
23:28someone who's
23:29going to be
23:30there to
23:30celebrate your
23:31good times.
23:32You're
23:33looking for
23:33someone who
23:34likes the
23:34chai exactly
23:35like the
23:35way you
23:36like the
23:36chai.
23:37And you're
23:37looking for
23:38someone who's

24:02a lane
24:02which is
24:03a dead
24:03end,
24:03so that
24:04lane doesn't
24:04go anywhere
24:05anywhere.

24:06is an old
24:07couple which
24:07comes to
24:08that lane
24:09every evening
24:10at about
24:106 or 6.30
24:11and the
24:13man drives,
24:14the woman
24:14comes with
24:15him,
24:15then the
24:15man gets
24:16out of
24:16his car,
24:17the woman
24:17gets out
24:17of the
24:18car,
24:18then both
24:19of them
24:19walk in
24:20the lane,
24:20the woman
24:21has a
24:21knee issue,
24:22so when
24:22he's walking
24:23with the
24:24wife,
24:24he walks
24:25slowly and
24:26she holds

24:27arms so

25:38leading to a
25:39lot of unhealthy
25:40thinking and
25:42eating and
25:42non-eating,
25:44not to mention
25:44the Ozympics
25:45and all those
25:46things.
25:46So if you can
25:47talk about that
25:48a little bit,
25:48please.
25:49See,
25:49I really think
25:50that somewhere
25:52this obsession
25:53to be thin,
25:54you know,
25:54especially in
25:55women,
25:55it's also about
25:57the obsession
25:57to become
25:59the smallest
26:00that one can
26:01be in the
26:02hope that
26:02they are
26:03therefore found
26:05attractive and
26:06acceptable and
26:07worthy of love.
26:09I have seen
26:09women do that
26:10even with their
26:11intelligence and
26:11speech,
26:12you know,
26:13some women
26:13almost take
26:14pride in saying
26:15how they can
26:16kind of play
26:17down and
26:18dumb down and
26:18laugh at every
26:19idiotic joke
26:20that they hear.
26:22But so,
26:22and I'm often
26:23accused of only
26:24giving dating
26:25advice to women,
26:26so today I will
26:27also give a
26:27dating advice
26:28to men that
26:30if a woman
26:30laughs at
26:31every joke,
26:32it's a red
26:32flag,
26:33you know.
26:36And if a woman
26:37tells you just
26:37shut up,
26:38I don't want to
26:38hear one more
26:39word,
26:39green flag,
26:41you know,
26:41that's the one
26:42that you're
26:43looking for.
